Layers of freshly made tomato sauce, a creamy spinach mixture and a richly textured corn mixture adorn perfectly cooked long-grain rice, giving this one-pot meal a well-rounded flavour and tantalising appearance.
Tangy, creamy and rich, this Layered Corn and Spinach Rice with Tomato Sauce is just too tasty to resist, and a garnish of grated cheese only makes it all the more luscious! Although the preparation takes a bit of time, the actual cooking time is less, so make it just before serving to enjoy the best appearance, texture and taste.

For the rice- Heat the butter in a broad non-stick pan, add the rice, milk and salt, mix gently and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.
For the corn mixture- Heat the butter in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for 30 seconds.
- Add the sweet corn, milk, fresh cream, sugar and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
For the creamy spinach- Heat the butter in a broad non-stick pan, add the green chillies and onions and sauté on a medium flame for 30 seconds.
- Add the spinach and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the fresh cream, mix well and cook on a medium flame for 30 seconds, while stirring occasionally. Keep aside.
For the tomato sauce- Heat the butter in a broad non-stick pan, add the garlic paste and onions and sauté on a medium flame for 1 minute.
- Add the tomato pulp, chilli powder, oregano, sugar, salt and 1 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Add the fresh cream, mix well and cook on a medium flame for 1 more minute, while stirring occasionally. Keep aside.
How to proceed- Spread the creamy spinach evenly at the bottom of the baking dish.
- Put the rice over it and spread it evenly.
- Spread the corn mixture evenly over it.
- Pour the tomato sauce and spread it evenly.
- Finally, top it with cheese and microwave on high for 2 minutes.
- Serve immediately.
