To make baked beans with buttered rice, for the buttered rice heat the butter in a broad non-stick pan, add the rice and salt and sauté on a medium flame for 1 to 2 minutes. Keep aside. For the baked beans mixture, heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute. Add the garlic paste and capsicum and sauté on a medium flame for 2 to 3 minutes. Add the chilli powder, baked beans, tomato ketchup and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.
Then to make bean vegetable rice, spread the rice in a 175 mm. (7”) diameter microwave safe baking dish and spread the rice evenly with the back of a spoon. Pour the baked beans mixture over it and spread it evenly. Sprinkle the cheese evenly over it and microwave on high for 3 to 4 minutes. Serve immediately.

Baked beans with buttered rice is made from 2 tbsp butter, 2 1/4 cups cooked basmati rice (chawal), 1 cup canned baked beans, 1/4 cup finely chopped onions, 1 tsp garlic (lehsun) paste, 1/2 cup finely chopped capsicum, 1/2 tsp chilli powder, 2 tbsp tomato ketchup, salt to taste and 2 tbsp grated processed cheese. To cook basmati rice, wash 1 cup of long-grained rice thoroughly under running water until you get clear water. The removal of starch from rice helps in getting separate grains after cooking.
