Ingredients

For The Coconut Sauce
1 cup coconut milk
1 tbsp oil
1/2 tsp cumin seeds (jeera)
2 curry leaves (kadi patta)
1 slit green chilli
salt to taste
1 tsp lemon juice
1/2 tsp sugar
2 tsp cornflour dissolved in 2 tbsp cold water

For The Rice
1 1/2 cups cooked rice (chawal)
2 tbsp oil
1/4 cup finely chopped onions
1 tsp green chilli paste
1 1/4 cups finely chopped spinach (palak)
salt to taste
Method

For the coconut sauce

    For the coconut sauce
  1. Heat the oil in a broad non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the curry leaves, green chilli, coconut milk, salt, lemon juice, sugar, cornflour-water mixture, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. Keep aside.

For the rice

  1. Heat the oil in a non-stick tava (griddle), add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the green chilli paste, spinach, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  3. Add the rice and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously. Keep aside.

How to proceed

  1. Fill the rice in a glass bowl and demould on a plate.
  2. Serve hot with coconut sauce.

Combination of coconut sauce and hariyali rice gives a perfect taste to the rice and it is excellent. And without coconut sauce it tastes like Suva rice which is too very good.

This Hariyali rice made with onions and spinach taste soo good that it can be eaten as it is also but when combined with the coconut sauce it is a complete meal. Great to serve for parties....
