5 fresh pineapple halves
1/4 cup melted butter
1/2 cup brown sugar
1/2 cup oil
3/4 cup milk
1 tsp pineapple essence
1 tsp vinegar
1 1/4 cups plain flour (maida)
1 cup powdered sugar
1 tsp baking powder
1/4 tsp baking soda

Blend it till coarse. Keep aside.

In a deep bowl, add 1/4 cup melted butter.

Add the brown sugar.

Mix it well using a whisk.

Put the brown sugar-butter mixture on a greased 175 mm. (7”) diameter cake tin and press it lightly.

Put one small fresh pineapple slice in the centre and a glace cherry inside it.

Decorate the sides with pineapple halves as show in the image.

Now add the dry ingredients to the milk-vinegar mixture and mix well using a spatula.

The batter should be of dropping consistency. Like show in the image.

Pour the batter gently over the pineapple and cherries.

Bake in a pre-heated oven at 180°C (360°F) for 30 minutes or till the cake leaves the sides of the tin.
