Crisply toasted bread slices with a creamy topping of mushrooms cooked with crunchy capsicum, spring onions, celery and cheese, the Cheesy Mushroom Squares are a perfect snack to serve at garden parties. You can keep the cheesy mushroom topping ready. Just toast the bread on-the-fly using a pop-up toaster, top it with some of the tantalising mixture, garnish appealingly with a slice of black olive and serve immediately.

Ingredients

For The Bread Pieces
4 bread slices

For The Mushroom Topping
1 1/4 cups chopped mushrooms (khumbh)
2 tsp butter
1 tsp finely chopped garlic (lehsun)
1/4 cup chopped spring onions (whites and greens)
1/4 cup finely chopped capsicum (red , yellow and green)
2 tsp finely chopped celery (ajmoda)
2 tsp dry red chilli flakes (paprika)
salt to taste
2 cheese slices , torn into pieces
2 tbsp milk

For The Garnish
16 sliced black olives
Method

  1. Toast 2 bread slices at a time in a popup toaster and cut each bread slice into 4 equal squares.
  2. Repeat step 1 with the remaining 2 bread slices. Keep aside.

For the mushroom topping

  1. Heat the butter in a broad non-stick pan, add the garlic and spring onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the celery and capsicum and sauté on a medium flame for another 1 to 2 minutes.
  3. Add the chilli flakes, mushroom and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  4. Add the cheese slices and milk, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Divide the topping into 16 equal portions.

  1. Top each bread square with one portion of the mushroom topping, garnish it with a slice of black olive and serve immediately.

This is a best party starter for my party, made in no time, but yet so tasty and creamy. Mushroom and celery is just superb combination with colorful capsicum, and the taste of olives, just gives a perfect finish.
