These toothsome parathas are made of nutritious whole wheat flour dough, and stuffed with a scrumptious mixture of cabbage and cottage cheese flavoured with coriander and green chillies.


The Cabbage Paratha is a good source of antioxidant compounds that fight against free radicals. Besides this, it is also rich in vitamin C. You can vary the portions to have it as a snack , or as a wholesome meal.

Ingredients

For The Dough
3/4 cup whole wheat flour (gehun ka atta)
1 tsp melted ghee
salt to taste

For The Stuffing
1 cup grated cabbage
1/4 cup crumbled paneer (cottage cheese)
2 tbsp chopped coriander (dhania)
1/2 tsp finely chopped green chillies
salt to taste

whole wheat flour (gehun ka atta) for rolling
1 1/4 tsp oil for cooking
Method

For the dough

  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water. Keep aside.

For the stuffing

  1. Sprinkle little salt over the cabbage and keep aside for 10 minutes.
  2. Squeeze out the water from the cabbage, add the paneer, coriander, green chillies and salt and mix well.
  3. Divide the stuffing into 5 equal portions and keep aside.

How to proceed

  1. Divide the dough into 5 equal portions.
  2. Roll out one portion of the dough into a 150 mm. (6”) diameter circle using a little wheat flour for rolling.
  3. Place a portion of the prepared stuffing on half of the circle and fold it over to make a semi-circle.
  4. Heat a non-stick tava (griddle) and cook the paratha, using ¼ tsp of oil, till golden brown spots appear on both the sides.
  5. Repeat steps 2 to 4 to make 4 more parathas.
  6. Serve immediately.

Tastes great off the tava... Though paneer and cabbage both are bland, coriander and green chilli are enough to perk up the flavours.

Grated cabbage and crumbled paneer make a great stuffing for this whole wheat paratha.
