what is bread kofta curry made of ?

 

    1. For the bread koftas is made from 6 fresh bread slices, 5 tbsp fresh curds (dahi), 2 tbsp plain flour (maida), 2 tbsp besan (bengal gram flour), 2 tbsp finely chopped coriander (dhania), 2 tsp finely chopped green chillies, a pinch of baking soda, salt to taste and oil for deep-frying. See below image of list of ingredients for bread kofta curry.
    2. For the curry is made from 1 cup bottle gourd (doodhi / lauki) cubes, 3 tbsp oil, 1/2 cup boiled and peeled baby potatoes, cut into halves vertically, 1/2 cup grated onions, 1/4 tsp turmeric powder (haldi), 2 tbsp coriander-cumin seeds (dhania-jeera) powder, 2 tsp chilli powder, 2 tbsp fresh curds (dahi), 3/4 cup fresh tomato pulp, salt to taste and 1/2 cup boiled green peas. See below image of list of ingredients for bread kofta curry.
how to make bread koftas

 

    1. Remove the crust from all 6 fresh bread slices. 
    2. Crumble the bread slices in a deep bowl.
    3. Add 5 tbsp fresh curds (dahi). You can also use sour curd. 
    4. Add 2 tbsp plain flour (maida). This is used for binding. 
    5. Add 2 tbsp besan (bengal gram flour)
    6. Add 2 tbsp finely chopped coriander (dhania)
    7. Add 2 tsp finely chopped green chillies. You can also use green chilli paste. 
    8. Add a pinch of baking soda
    9. Add salt to taste. 
    10. Mix well.
    11. Divide the mixture into 20 equal portions.
    12. Roll each portion into a small ball.
    13. Heat the oil in a kadhai.
    14. Deep-fry a few koftas at a time, till they are golden brown in colour from both all sides.
    15. Drain on absorbent paper and keep aside.

    2. Add 1 cup of water.
    3. Cook on a medium flame for 8 to 10 minutes or till the bottle gourd is soft, while stirring occasionally.
    4. Allow the mixture to cool completely.
    5. Blend in a mixer to a smooth paste. Keep aside.
    6. Heat 2 tbsp oil in a deep non-stick pan.
    7. Add 1/2 cup boiled and peeled baby potatoes , cut into halves vertically. 
    8. Sauté on a medium flame for 2 to 3 minutes or till they are light brown in colour. 
    9. Drain and keep aside.
    10. In the same deep pan, heat the remaining 1 tbsp of oil
    11. Add 1/2 cup grated onions
    12. Sauté on a medium flame for 2 to 3 minutes or till they turn translucent.
    13. Add 1/4 tsp turmeric powder (haldi)
    14. Add 2 tbsp coriander-cumin seeds (dhania-jeera) powder
    15. Add 2 tsp chilli powder
    16. Add 2 tbsp of water.
    17. Sauté on a medium flame for 1 minute.
    18. Add 2 tbsp fresh curds (dahi)
    19. Add 3/4 cup fresh tomato pulp
    20. Mix well.  
    21. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    22. Add the bottle gourd paste.
    23. Add ½ cup of water. 
    24. Add salt to taste. 
    25. Add 1/2 cup boiled green peas
    26. Add the sautéed potatoes. 
    27. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
how to assemble and serve

 

    1. Just before serving, add the bread koftas. 
    2. Mix lightly and cook on a medium flame for 1 to 2 minutes.

tips to make bread kofta curry

 

    1. The curry can be made in advance and kept. 
    2. Add koftas just before serving. 
    3. Use fresh bread slices as old ones will make it very dry. 
    4. Serve with butter naan or any paratha along with raita for a complete meal.
