Potatoes stuffed with potatoes! Well, yes, this scrumptious Bhojpuri Aloo features boiled potatoes packed with a mixture of mashed potatoes, lemon juice and spice powders, cooked with an intense mixture of milk, curds and besan perked up with an assortment of spices. The combination of dairy products gives this semi-dry subzi a rich and luscious flavour, which is complemented very well by the whole spices. You will love this flavourful and sumptuous preparation, served immediately with rotis and dal.

Ingredients
2 boiled potatoes , peeled and cut into halves vertically
1/2 cup milk
4 tbsp curds (dahi)
4 tsp besan (bengal gram flour)
1 tbsp oil
2 cloves (laung / lavang)
1 cardamom (elaichi)
1 bayleaf (tejpatta)
1 small stick cinnamon (dalchini)
1 tsp caraway seeds (shahjeera)
1/2 tsp ginger-garlic (adrak-lehsun) paste
2 tbsp grated onions
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
a pinch of sugar
salt to taste

To Be Mixed Into A Stuffing
4 tbsp boiled and mashed potatoes
a pinch of turmeric powder (haldi)
1/2 tsp chilli powder
1/4 tsp lemon juice
1 tbsp chopped coriander (dhania)
salt to taste

For The Garnish
2 tsp finely chopped coriander (dhania)
Method
    Method
  1. Scoop the potatoes halves using a spoon. Use the scooped potato in making the stuffing and keep the potato halves aside.
  2. Divide the stuffing into 4 equal portions and stuff each potato halve with the stuffing and keep aside.
  3. Combine the milk, curds and besan in a bowl, mix well and keep aside.
  4. Combine the oil, cloves, cardamom, bayleaf, cinnamon and caraway seeds in a microwave-proof bowl and microwave on high for 1 minute.
  5. Add the ginger-garlic paste ,onions, turmeric powder, chilli powder, sugar and salt, mix well and microwave on high for 1 minute.
  6. Add the milk- curds- besan mixture, mix well and microwave on high for 1 minute.
  7. Add the stuffed potatoes to the gravy, mix gently and microwave on high for 2 minutes.
  8. Serve immediately garnished with coriander.

the stuffing of aloo is also made up of potatoes than also it taste delicious...the stuffed aloo and gravy both are compliment to each other...
