Ingredients

For The Baked Sev - Makes 1 1/2 Cups
1 cup besan (Bengal gram flour)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
2 tsp lemon juice
1/4 tsp asafoetida (hing)
salt to taste
1/4 tsp oil for greasing

Other Ingredients
1 tsp oil
1/2 cup chopped onions
1/2 cup chopped capsicum
1 cup boiled sweet corn kernels
1/2 cup chopped tomatoes
1/2 cup chopped unpeeled apples
1/4 cup orange segments (optional)
1/4 cup chopped coriander (dhania)
a pinch sugar
1 tbsp lemon juice
salt to taste

For The Topping
1/2 cup baked sev , recipe above

For Serving
4 lemon wedges
Method

    For the baked sev
  1. Combine all the ingredients in a bowl, add enough water, mix well and knead into semi-stiff dough.
  2. Lightly grease your hands with oil and shape the dough into a roll.
  3. Fill the dough into the sev ‘press’ and press out thin strands onto a greased baking tray.
  4. Bake in a pre-heated oven at 200°c (400°f) for 8 to 10 minutes or till it becomes crisp and turns light brown in colour.
  5. Cool completely, crush it and keep aside.

How to proceed

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame till they turn translucent. Sprinkle a little water to avoid the onions from burning.
  2. Add the capsicum and corn and sauté on a medium flame for another minute.
  3. Remove from the flame, add all the remaining ingredients and mix well.
  4. Serve immediately topped with baked sev and lemon wedges.

Tips
  1. Ensure you press out very thin sev so that it bakes and turns crisper evenly.
