Is it possible to satisfy all these needs with one dish? yes, and that is precisely what this one-dish meal demonstrates. The ground paste of coconut, cinnamon, poppy and cardamom imparts a lingering flavour, while the garnish of fried onions and cashews adds an extra zing. Soaking is important to reduce microwave cooking time.

Ingredients

To Be Ground Into A Smooth Paste (using 2 Tbsp Of Water)
2 tbsp grated fresh coconut
2 green chillies
4 cloves (laung / lavang)
2 to 3 cardamoms
2 small sticks cinnamon (dalchini)
1 tsp poppy seeds (khus-khus)
12 ginger (adrak)

Other Ingredients
1/2 cup rice (chawal) , cleaned and washed
2 tbsp ghee
1 cup sliced onions
1/2 cup chopped carrots
1/3 cup green peas
1/3 cup chopped potatoes
1 1/3 cups chopped cauliflower
1 tbsp lemon juice
salt to taste

For The Garnish
fried sliced onions
fried cashewnut (kaju)
Method
    Method
  1. Soak the rice in enough water for 30 minutes. Drain well and keep aside.
  2. Put the ghee in a microwave safe bowl and microwave on high for 30 seconds. Add the onions, mix well and microwave on high for 1 minute or till they turn light pink in colour.
  3. Add the prepared paste, mix well and microwave on high for 20 seconds.
  4. Add the rice, all the vegetables, lemon juice, salt and 1¾ cups of water, mix well and microwave on high for 20 minutes, stirring in between after every 5 minutes.
  5. Switch off the microwave but allow the dish to stand in the microwave for 3 more minutes.
  6. Serve immediately garnished with fried onions and cashewnuts.

Tips
  1. Serve hot.
