Ingredients

For Macaroni Salad
2 cups cooked macaroni
1/4 cup finely chopped onions
1/4 cup finely chopped capsicum
2 tbsp finely chopped celery (ajmoda)
3/4 cup thick white sauce
1/4 cup thick curds (dahi)
1/2 tsp powdered sugar
salt and to taste
1 1/2 cups shredded iceberg lettuce

To make thick sauce for macaroni salad

  1. For making the Thick White Sauce, heat the butter in a broad non-stick pan.    
  2. Once the butter has melted, add the plain flour.    
  3. Cook on a slow flame for 1 to 2 minutes, while stirring continuously with the help of a whisk. This is called as a roux which acts a thickening agent for the Thick White Sauce. The frequent stirring helps in even cooking of the flour apart from preventing it from forming lumps.    
  4. Once you see the flour has become a little froth and golden in colour, reduce the flame to low and add the milk. Pour the milk with one hand and whisk using the other hand. If you are vegan or allergic to dairy products, then use almond milk.        
  5. Whisk well and cook on a medium flame for 3 to 4 minutes, or till the Thick White Sauce thickens, while stirring continuously. It is very important to mix continuously after you add the milk and whisk until the flour and milk have incorporated well. If not whisked well, you might get lumps in your Thick White Sauce.    
  6. Add the salt and pepper.    
  7. Mix well and cook on a medium flame for 1 more minute. You can even add little nutmeg powder to enhance the flavor of Thick White Sauce.  
  8. Our thick white sauce is ready!! Cool the Thick White Sauce completely

Method for macaroni salad

For that boil plenty of water in a large pan with 1 tsp of salt and 1 tsp of oil. Add the macaroni to the boiling water and cook uncovered, stirring occasionally and gently until the macaroni is tender. Cooking time may vary with the size and the thickness of the macaroni. Immediately drain the cooked macaroni into a sieve or a colander. Transfer to a bowl of cold water to refresh it. Drain again and keep aside. If the macaroni is not to be used immediately, add 1 tbsp of oil to it and toss it. Keep aside. 
  2. Next add 1/4 cup finely chopped onions in a deep bowl. 
  3. Add 1/4 cup finely chopped capsicum.
  4. Add 2 tbsp finely chopped celery (ajmoda)
  5. Add prepared 3/4 cup thick white sauce. This adds creaminess to the macaroni salad recipe | classic macaroni salad | easy homemade creamy macaroni salad | pasta salad Indian style. 
  6. Further add 1/4 cup thick curds (dahi).
  7. Add 1/2 tsp powdered sugar. We have used powdered sugar as it mixes well with the other ingredients. If you don’t have powdered sugar, grind the table sugar in a mixer and sieve it before use.
  8. Add salt to taste.
  9.  Add freshly ground black pepper (kalimirch) to taste.
  10. Mix well using a spoon. 
  11. To this add cooked macaroni.

At first i thought how would white sauce and curd taste together, but when i tried this recipe it turned out to be amazing. Just loved this recipe. The capsicum and onion add nice crunch to the soft cooked macaroni. Very quick recipe and delicious too.
