Ingredients

For Lettuce Cauliflower Soup
3 cups iceberg lettuce , torn into pieces
1 cup finely chopped cauliflower
2 tsp olive oil or oil
1/4 cup finely chopped onions
3 cups basic vegetable stock
salt to taste
freshly ground black pepper (kalimirch) to taste
Method

  1. To make lettuce and cauliflower soup, heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the lettuce and cauliflower and sauté on a medium flame for 2 minutes
  3. Add 3 cups of vegetable stock or water and salt, mix well and cook on a medium flame for 10 minutes, while stirring occasionally.
  4. Allow the mixture to cool completely and blend in a mixer to a smooth purée.
  5. Transfer the purée into a deep non-stick pan, add the pepper powder, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Serve lettuce and cauliflower soup hot.

How well does it freeze?

Tarla Dalal    We have not tried to freeze it. It has onions as well it will go bad and plus it will lose its nutrients and taste may differ.
