Ingredients
For Green Peas Sandwich
1 cup boiled and crushed green peas
8 toasted whole wheat bread slices
salt for sprinkling
To Be Mixed Into A Thousand Island Dressing (makes Approx. 1/4 Cup)
2 tbsp thick fresh curd (dahi)
1 tbsp fresh cream
1 tsp finely chopped onion
1 tsp finely chopped capsicum
2 tsp tomato ketchup
1/2 tsp sugar
1/4 tsp red chilli sauce
1/4 tsp finely chopped green chillies
1/4 tsp mustard (rai / sarson) powder
salt to taste
Method
- To make green peas sandwich, combine the green peas and the prepared thousand island dressing in a deep bowl and mix well.
- Divide the stuffing into 4 equal portions and keep aside.
- Place a bread slice on a clean dry surface.
- Spread a portion of the stuffing evenly on it and place 3 tomato slices over it. Sprinkle a little salt over it, and sandwich it using another bread slice.
- Repeat steps 2 to 4 to make 3 more sandwiches.
- Serve the green peas sandwich immediately.
- If your kids are fussy, be innovative and cut the sandwiches into different shapes like triangles, circles or even teddy bears or pussycats.
