Fattoush is a Lebanese salad made by combining toasted and chopped pita bread with the choicest of veggies and herbs.

The texture of this Middle Eastern Fattoush salad is truly out-of-the-world, as it combines the crispiness of toasted pita bread with the juicy crunchiness of veggies. A simple but flavourful olive oil based dressing adds to the charm of this Fattoush salad, making it an incomparable treat.

To make Fattoush salad healthy, you can use whole wheat pita bread and toast it, instead of pita bread made with plain flour. We have used regular pita bread to make Fattoush salad as this is readily available in bakery stores and supermarkets across India.

Ingredients

For Fattoush
1 pita bread round or oval
oil for deep-frying
3/4 cup cucumber cubes
3/4 cup tomato cubes
3/4 cup iceberg lettuce , torn into pieces
1/2 cup capsicum cubes
1/4 cup finely chopped parsley
1/4 cup finely chopped spring onion greens
1/4 cup chopped mint leaves (phudina)
1/4 cup thinly sliced spring onions whites

To Be Mixed Into A Dressing For Fattoush
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp finely chopped garlic (lehsun)
salt and to taste
1/4 tsp lemon rind
1/2 tsp powdered sugar
Method

  1. To make fattoush salad, place a pita bread on a clean, dry surface and slice it horizontally into 2 using a sharp knife.
  2. Cut into small equal sized squares using a sharp knife.
  3. Heat the oil in a deep non-stick pan and deep-fry a few pieces till they turn golden brown in colour form all the sides. Drain on an absorbent paper. Keep aside.
  4. Combine all the ingredients, along with the dressing in a deep bowl and toss well.
  5. Serve the fattoush salad immediately.

  1. You can buy readymade pita bread or follow our recipe to make homemade pita bread.
  2. To toss the fattoush salad choose a large bowl. This will give you enough room to move the salad around while tossing it.

How to make Fattoush with step by step photos

  1. For the fattoush salad, first we will make the pita bread cubes. For this place a pita bread on a clean, dry surface.
  2. Cut in horizontally into 2 using a sharp knife.
  3. Cut into equal sized cubes using a sharp knife.
  4. Heat the oil in deep non-stick pan and deep-fry a few pieces at a time till they turn golden brown in colour form all the sides.

Making the salad dressing for Fattoush

  1. In a bowl or small glass bottle, take olive oil in a bowl. Most salad dressings make use of extra virgin olive oil which is not only light and delicate, but also, healthy.
  2. Add lemon juice.
  3. Then add finely chopped garlic.
  4. Finally add salt and black pepper powder to taste.
  5. Mix well.
  6. Add lemon zest.
  7. Add powdered sugar.
  8. Mix it well. Keep aside.

Tossing the Fattoush Salad

  1. In a deep bowl take the cucumber cubes. They provide a refreshing crunch to the salad.
  2. Add deseeded tomato cubes. You can even make use of cherry tomatoes to give a tangy flavour.
  3. Submerge the lettuce leaves in a bowl of cold water. Let them sit for 5–10 minutes and it will be as good as fresh lettuce. This is a secret tip to make the lettuce leaves crunchy and crispy. Roughly tear and add iceberg lettuce.
  4. Add capsicum cubes.
  5. Add finely chopped parsley.
  6. Add finely chopped spring onion greens.
  7. Add chopped mint leaves.
  8. Add sliced spring onion whites.
  9. Mix well.
  10. Finally add the pita bread pieces.
  11. Add the prepared salad dressing.
  12. Toss the salad and serve immediately.

This Lebanese salad is just amazing, the pita bread taste great in this recipe along with cucumber, tomatoes, lettuce and spring onions. The dressing has a good taste of olive oil and garlic along with lemon juice.

Fattoush is a Lebanese salad made up of vegetables and pieces of crunchy toasted pita bread. This is a nice colorful salad with cucumber, tomato., lettuce, radish and spring onions.
