      2. Excess amount of baking powder or baking soda used in Date and Walnut Cake
      3. If it is under baked.
      4. If the batter is out for too long before baking.
      5. Opening the door of the oven at a very early stage.
How to make Date Walnut Cake

    1. For making the date walnut cake (eggless date walnut cake), first pre-heat the oven to 180°C (360°F). Using a pastry brush, generously butter a bread loaf tin of 200 mm. (8”) or regular cake pan wich is lined with a baking paper and keep aside.
    2. In a deep bowl, take instant coffee powder.
    3. Add 1 tbsp of hot water. If you have a coffee press, then you can even make use of an espresso shot.
    4. Mix well and keep aside. You can make the cake with just walnuts and dates but, the coffee enhances the taste greatly.
    5. In another bowl, take the sliced dates. You can use any varieties of dates just ensure they are pitted.
    6. Add 1 cup of hot water.
    7. Cover with a lid and keep aside to soak for 30 minutes.
    8. After half an hour it will look like this. The dates will soften which will provide a moistness to the date and walnut cake.
    9. Drain the dates and keep aside.
    10. In another bowl, take the soft butter.
    11. Pour the condense milk. Since, this is an eggless cake recipe we are using condense milk that will help us achieve an ideal texture.
    12. Beat it using an electric beater till smooth and fluffy.
    13. Add the plain flour.
    14. Add the baking powder and baking soda. We are using both because we have added enough soda to neutralize the acid in the Date & Walnut Cake recipe.
    15. Mix well using a spatula.
    16. Add the soaked dates.
    17. Add ½ cup walnuts. They provide a nice bite to the walnut dates cake.
    18. Add the vanilla essence and coffee-water mixture. These both act as a flavor enhancer in the eggless date and walnut cake recipe.
    19. Mix well using a spatula.
    20. Pour the batter into the greased bread loaf tin and tap it lightly.
    21. Sprinkle the remaining ¼ cup of walnuts evenly over date walnut cake (eggless date walnut cake). The walnuts on top which will turn crunchy on baking will provide a nice bit of crunch to each slice of the cake.
    22. Bake it in a pre-heated oven at 180°c (360°f) for 55 minutes or till the toothpick inserted comes out clean. As each oven is different therefore start checking the cake after 40 minutes to make sure it doesn't over bake.
    23. Cool slightly.
    24. Loosen the sides of the date walnut cake (eggless date walnut cake) with the help of a knife.
    25. Demould it. For demoulding, simply invert the cake tin on a clean chopping board or plate.
    26. Allow the date walnut cake (eggless date walnut cake) to cool completely and cut the cake into 13 mm. (½“) slices.
    27. Serve the date walnut cake (eggless date walnut cake) or store in an air-tight container.
    28. Eggless Orange and Tutti Frutti Loaf, Chocolate Carrot Loaf are other tea-time cakes.

Hi, can you please mention the quantity by weight so that it would be easy for beginners to start with minimal failure. Also, when you say one cup... how much does it measure by weight/size/quantity. This will be really helpful ??. Help with the quantity by weight.

Is there any substitute for condensed milk? What would be the measurements for the same?

user
Tarla Dalal

March 13, 2025, midnight

Hi Anuradha, since this is eggless cake recipe, condensed milk gives it a good volume and makes the cake soft, since you requested you can substitute it with 1/2 cup milk powder 1 tbsp powdered sugar 2 tsp melted butter 3 to 4 tbsp of hot water, mix these ingredients well and make a pouring mixture and use it instead of condensed milk. We havent tried this substitute yet in our kitchen, do try and share your feedback with us. Happy Cooking!!!

Hi, There is a lot of condensed milk and dates for sweetness if you wish you can add more condensed milk and adjust the consistency accordingly.
