- Add ½ tbsp of castor sugar in the yolk bowl and whisk it using an electric beater on high speed for 30 seconds.
- Add the coffee-vanilla essence mixture and whisk well using an electric beater on medium speed for 30 seconds.
- Add the melted chocolate and whisk well using an electric beater on medium speed for 1 minute.

- Finally, add the egg white mixture, fold gently using a spatula.
