1 cup bajra (black millet) flour
1/2 cup grated carrot
1/2 cup finely chopped spinach (palak)
1 tsp green chilli paste
1 tsp garlic (lehsun) paste
salt to taste

3 tsp oil for cooking
Method
Bajra gajar palak paratha
- In a deep bowl add bajra flour, grated carrots, spinach, green chilli paste, garlic paste and salt. Knead into semi-soft dough using enough warm water.
- Divide the dough into 8 equal portions and roll out each portion into a circle of 100 mm (4”) diameter, using a little bajra flour for rolling
- Heat a non-stick tava (griddle) and cook each paratha using a little oil, till it turns golden brown in colour from both sides.
- Serve bajra gajar palak paratha immediately with curds.

This gluten free recipe is super delicious. Carrot and spinach goes really well with the bajra flour. At first i was confused how would it taste, but after trying it i was totally satisfied. So i am surely going to make this recipe again.
