Method
For the dough
  1. Combine all the ingredients in a deep bowl and knead into soft dough using enough warm water.
How to proceed
  1. To make stuffed nachni paratha, divide the stuffing into 4 equal portions and keep aside.
  2. Divide the dough into 4 equal portions.
  3. Roll each portion into a 150 mm (6") diameter circle using a little nachni flour for rolling.
  4. Put 1 portion of the filling on one half of the roti and fold it over to make a semi-circle.
  5. Heat a non-stick tava (griddle) and cook the paratha, using a little oil, till it turns golden brown in colour from both the sides.
  6. Repeat steps 3 and 4 to make 3 more parathas.
  7. Serve the stuffed nachni paratha immediately.

    1. what is stuffed nachni paratha made of ? is made from 1 cup ragi (nachni / red millet) flour and a stuffing of 1/2 cup thinly grated carrot, 1/2 cup crumbled paneer (cottage cheese), 1/4 cup finely chopped coriander (dhania) leaves. 1 tsp finely chopped green chillies and salt to taste.     3. Gradually add enough hot water to make a soft dough. We added 1/2 cup water plus 1 tablespoon.
    4. Knead into a soft dough.

    7. Heat a non-stick tava (griddle) and grease with oil.
    8. Place the paratha on it.
    9. Grease the top of the paratha using a brush with oil.
    10. Cook the paratha, using a little oil on both the sides.
    11. Press down with a spatula on the paratha while cooking.
    12. You will have to cook the edges of the paratha by using a chmita, lifting it and cooking it on the tava. This is important or the edges of the paratha will be uncooked.
    13. Cook the paratha, using a little oil, till it turns golden brown in colour from both the sides.
    14. Cut each paratha into 2 using a sharp knife.

Nachni offers a significant and fab taste to the parathas.. Stuffing is an add-on.. It is a wonderful combination of the nachni paratha and the stuffing..
