Spreads transform simple breads and toasts into lavish fare! This spread is a nice combo water-filled zucchini, and vitamin rich parsley pepped up with the flavours of lemon, chillies and walnuts. You would not head for fat-laden butter and cheese after you have tasted brown bread with this delectable spread!

Ingredients

For The Zucchini Spread (makes Approx. 3/4 Cup)

For Serving

Method
For the zucchini spread
  1. Squeeze the zucchini with hands to remove the excess water.
  2. Combine all the ingredients, except the walnuts, and blend in a mixer to a smooth paste.
  3. Transfer the paste to a bowl, add the walnuts and mix well.
  4. Cover and refrigerate for at least an hour.
  5. Divide the spread into 8 equal portions and keep aside.
How to proceed
  1. Just before serving, toast the bread slices in a sandwich griller till they are brown and crispy from both the sides.
  2. Apply a portion of the spread evenly over each bread slice.
  3. Serve immediately.

Hi. We tried this recipe. Found the taste a little bitter. Otherwise very tasty. Please suggest. Is it due to the peel of the zucchini? Thanks

Hi Pooja, We have tried to balance the taste with other herbs but, if you want you can lightly peel the zucchini to get rid of the bitterness.

This dip served with toast is great for a party...it is very different and easy to make...the lemon juice, garlic, chilli paste, parsley blended with zucchini, just taste perfect....walnuts add a nice crunch to this dip..
