I grew up as a child loving this mumbai roadside masala toast which is available as a quick evening snack or a chaat recipe. Enjoyed by those going home from work, you can see street vendors close to railway stations ready at any point to serve 3 to 4 masala toasts which are 90% ready. Served on paper plates with their own version of tomato sauce.

Method

For the aloo masala
 

  1. Heat the oil in a deep non-stick pan and add the mustard seeds.
  2. When the seeds crackle, add the curry leaves and sauté on a medium flame for a few seconds.
  3. Add the potatoes, green peas, turmeric powder, green chilli paste, coriander and salt, mix well and cook on a medium flame for another minute.
  4. Divide the aloo stuffing into 4 equal portions and keep aside.


How to proceed to make masala toast
 

  1. To make masala toast, apply 1 tsp of butter and 1 tsp of garlic green chutney on each bread slice and keep aside.
  2. Place a slice of bread, with the buttered side facing upwards, on a clean, dry and flat surface.
  3. Place one portion of the aloo masala and spread it evenly over it.
  4. Arrange 2 onion slices, 3 tomato slices and 6 to 7 capsicum slices over the stuffing and sprinkle ¼ tsp of sandwich masala evenly over it.
  5. Cover it with another slice of bread, with the buttered side facing downwards and press it lightly. Spread ¼ tsp of butter evenly over the bread slice.
  6. Grease a sandwich toaster on both the sides using ½ tsp of butter.
  7. Place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
  8. Cut the masala toast, into 6 equal pieces, place it on a plate and apply ½ tsp of butter evenly over it.
  9. Sprinkle 1 tbsp of sev evenly over the masala toast.
  10. Repeat steps 2 to 8 to make 3 more bombay masala toasts.
  11. Serve the mumbai roadside masala toast sandwich immediately with tomato ketchup and garlic green chutney.


Variation:
 

  1. Cheese masala toast: place a generous amount of grated processed cheese over the capsicum slices (at step 4 after the capsicum slices) and proceed as per the recipe. Finally at step 9 replace the nylon sev with grated processed cheese for the topping and serve immediately.

For the sandwich green chutney

 

    1. To make green chutney for chilli cheese toast recipe | veg chilli cheese toast on sandwich toaster | Mumbai roadside chilli cheese toast | in a small mixer jar, take roughly chopped coriander.
    2. Add the freshly grated coconut to it. Preferably use freshly grated coconut. It gives a nice texture and thickeness to the chutney. Roadside vendors add bread slice to provide the thickness, you can refer to this recipe of Mumbai style green chutney.
    3. Now, add chopped spinach. This ingredient is a must to provide a bright green colour to the chutney.
    4. Add the roughly chopped garlic and roughly chopped green chillies. These ingredients provide the peppiness to the sandwich chutney.
    5. Finally, add salt to taste and a few drops of lemon juice. Lemon helps in retaining the colour and not turning it dull.
    6. Using 1/4 cup of water, blend till smooth. Keep aside.
For the Bombay masala toast sandwich

 

    1. For making the bomaby masala toast stuffing, first heat the oil in a deep non-stick pan and add the mustard seeds.
    2. When the seeds crackle, add the curry leaves and saut? on a medium flame for a few seconds.
    3. Add the boiled potatoes. Learn how to boil potatoes in a microwave in just 7 minutes.
    4. Add the green peas. This masala doesn?t require a lot of ingredients so, it is quick and easy to cook.
    5. Now add the turmeric powder and green chilli paste. If you love spicy food, feel free to increase the amount of green chilli paste. Also, you can add little red chilli powder. 
    6. Finally, add the coriander and salt.
    7. Mix well and cook on a medium flame for another minute.
    8. Divide the bomaby masala toast stuffing into 4 equal portions and keep aside.
How to make Mumbai masala toast sandwich

 

    1. To make chilli cheese toast recipe | veg chilli cheese toast on sandwich toaster | Mumbai roadside chilli cheese toast | apply 1 tsp of butter on each bread slice. This prevents the bread slice from turning soggy. Multi-grain and whole wheat bread are healthy alternatives. 
    2. Now apply 1 tsp of garlic green chutney on each bread slice and keep aside.
    3. Place the slice of bread with the buttered side facing upwards, on a clean, dry and flat surface.
    4. Place one portion of the aloo masala and spread it evenly over it.
    5. Arrange 2 onion slices.
    6. Now put 3 tomato slices.
