  1. To make soya bean bhaji recipe, boil enough water in a deep non stick pan, add salt and soya chunks to the boiling water.
  2. Mix well and cook on a medium flame for 5 to 8 minutes.
  3. Drain well and press gently to remove the excess water from the soya chunks. Keep aside.
  4. Combine tea powder and 1 cup water in a small pan and bring it to a boil.
  5. Strain the tea water and discard the tea powder. Keep aside.
  6. Heat 3 tbsp oil in a deep wok or a deep pan, add cumin seeds and onions. Sauté on a medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Add turmeric powder, chilli powder, coriander cumin seeds powder and mix well.  
  8. Add the prepared paste and cook on a medium flame for 2 to 3 minutes, until the oil is released.
  9. Add the soya chunks, tea water, salt to taste and kasuri methi. Mix well and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
  10. Serve soya bean bhaji hot garnished with coriander.

    1. In a mixer jar, add ¾ cup roughly chopped tomato ,deseeded. Tomatoes are a fundamental ingredient in many Indian curries and gravies. They provide a tangy and slightly sweet flavor that forms the base of the masala.

    2. Add 8 to 10 garlic (lehsun) cloves. They add a pungent, savory flavor that complements the other spices in the masala.

    3. Add 1 tsp chopped ginger (adrak). Ginger adds a warm, pungent, and slightly sweet flavor to the masala.

    4. Add 1 chopped green chillies. Chopped green chilies add a spicy kick to the masala for soya bean bhaji.

    5. Add ¼ cup chopped coriander (dhania). Coriander leaves have a distinct flavor that complements the spices and other ingredients in the bhaji. They add a refreshing touch and balance the richness of the dish.

    15. Add ½ tsp turmeric powder (haldi).

    16. Add 1 tsp Kashmiri red chilli powder. Chilli powder is a key ingredient in soya bean bhaji, adding a spicy kick and depth of flavor to the dish.

    17. Add 2 tbsp coriander-cumin seeds (dhania-jeera) powder. Coriander and cumin seed powder are used in soya bean bhaji to create a flavorful, aromatic, and potentially more digestible dish.

    18. Mix well. 

    19. Add the prepared masala paste.

    20. Cook on a medium flame for 2 to 3 minutes, until the oil is released. 

    21. Add the soaked soya chunks.

    22. Add the tea water.

    23. Add salt to taste.

    24. Add 1 tsp dried fenugreek leaves (kasuri methi).

    25. Mix well and cook on a medium flame for 8 to 10 minutes, while stirring occasionally. 

    26. Add 2 tbsp finely chopped coriander.

    27. Mix well.
