3 cups cauliflower florets
2 tbsp olive oil
1 tbsp butter
2 tbsp chopped garlic (lehsun)
1 tsp finely chopped green chillies
1 cup finely chopped onions
4 cups basic vegetable stock
salt to taste
freshly ground black pepper (kalimirch) to taste
1 tsp lemon juice
Method
- To make roasted cauliflower soup recipe, arrange the cauliflower on a lined baking tray. Drizzle 1 tbsp olive oil over it.
- Sprinkle a little salt and pepper powder over it. Mix it well.
- Bake in a pre-heated oven at 180° C (360° F) for 10 to 15 minutes or until the charred marks appear.
- Remove the tray and keep aside to cool slightly.
- Meanwhile, heat 1 tbsp olive oil and butter in a deep non-stick pan, add garlic and onions.
- Sauté on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the green chillies and roasted cauliflower mixture and sauté on a medium flame for 2 to 3 minutes.
- Remove a little mixture on a chopping board, roughly chop it and keep aside.
- Add the vegetable stock. Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Switch off the flame and blend the mixture using a hand blender to a smooth paste.
- Add the chopped cauliflower, salt, freshly ground black pepper powder to taste and lemon juice.
- Mix well and cook on a medium flame for 2 to 3 minutes.
- Serve roasted cauliflower soup hot.
