How to make Rava/Sooji cake

  1. In a deep bowl, take semolina. We have used fine quality rava for the sooji cake recipe.
  2. Add cardamom powder to it. It enhances the flavor and aroma of the suji cake. It can be substituted with vanilla essence, lemon/orange zest as per your preference.
  3. Now add powdered sugar and mix well using a spoon.
  4. Add the oil. Oil coats semolina better than butter so, we use oil to make the rava cake moist and tender.
  5. Also, add curds. Fresh curd is used in eggless cakes to make sure that the baking soda has something acidic to react with.
  6. Add ¼ cup of milk. It provides a rich flavour and texture without using eggs.
  7. Finally, add mixed nuts (walnuts, cashew nuts and, almonds) and mix gently using a spatula. Dry fruits or tooti frooti perk up the rava cake (sooji cake). You can also add around 3 tbsp cocoa powder to the mixture if preparing chocolate rava cake.
  8. Cover the batter with a lid and keep aside for 15 minutes. The semolina absorbs the liquid and puffs up.
  9. Add the baking powder and baking soda. Both baking powder and baking soda are leavening agents that cause the batter to rise making the eggless semolina cake fluffy.
  10. Add the remaining ¼ cup of milk and mix well. Semolina soaks all the milk so, we add more milk to adjust to a pouring cake batter consistency.
  11. Grease a 150 mm. (6”) diameter aluminium cake tin using butter.
  12. Pour the batter into the greased cake tin. Tap it gently to form an even layer.
  13. Heat 2 cups of water in a pressure cooker.
  14. Keep a stand in it.
  15. Slowly place the cake tin on the stand in the pressure cooker.
  16. Close the lid of the pressure cooker and cook on a slow flame for 20 minutes, without using the ring and whistle.
  17. Open the lid and check the cake with help of a knife. If it comes out clean, then the cake is done.
  18. Remove the cake tin and keep aside to cool slightly.
  19. Once cooled, loosen the edges using a knife.
  20. Invert the Pressure Cooker Rava Cake tin over a plate.
  21. Tap sharply to unmould the Pressure Cooker Rava Cake.
  22. Invert the Pressure Cooker Eggless Sooji Cake.
  23. Cut the Pressure Cooker Rava Cake into pieces and serve. This is a perfect cake for a high-tea or a quick-fix for your sudden sweet tooth cravings!

I do not have a oven and was looking out for a good recipe of cake which I could easily make in a pressure cooker. The recipe is so quick to make as the ingredients are also easily available in your own kitchen. I didnt have to go hunting for anything. Made it instantly for my Grandfathers birthday. He loved the spongy cake which uses rava and no maida or eggs at all and lots of dryfruits too. So delicious.
