To make plum cake, sieve the plain flour, baking powder and baking soda in a deep bowl and keep aside. Combine the raisins, black raisins, sweet cherries, tutti frutti and rum in a deep bowl, mix well and cover with a lid and keep aside for 24 hours. Combine the butter and condensed milk in a deep bowl and mix well using a whisk till smooth. Add the sieved flour mixture gradually and fold gently using a spatula. Add the cinnamon powder, nutmeg, cocoa powder, vanilla essence, soaked dry fruits, mixed nuts, orange rind and mix well. Add the orange juice little by little to adjust the consistency. Transfer the mixture in a greased 200 mm. (8") aluminum tin and bake in a pre-heated oven at 180°C (360°F) for 35 to 40 minutes. Cool slightly, loosen the edges using a knife and demould it by inverting the tin over a board and tap gently to unmould the loaf. Brush the loaf with little sugar syrup and keep aside for 10 to 15 minutes. Cut into thick slices and serve immediately or store in an air-tight container. Use as required.

1 1/2 cups plain flour (maida)
1 tsp baking powder
1/2 tsp baking soda
2 tbsp roughly chopped raisins (kismis)
2 tbsp roughly chopped black raisins
2 tbsp roughly chopped sweet cherries
1/4 cup tutti-frutti
1/2 cup rum
1/2 cup soft butter
3/4 cup condensed milk
1/2 tsp cinnamon (dalchini) powder
1/2 tsp nutmeg (jaiphal) powder
1 1/2 tbsp cocoa powder
1/2 tsp vanilla essence
1 cup chopped mixed nuts
2 tsp grated orange rind
6 tbsp orange juice , refer handy tip
sugar syrup for brushing

For the dry ingredients of plum cake

  1. For the dry ingredients of plum cake, place a sieve on a deep bowl. Add the plain flour on a sieve.
  2. Add baking powder.
  3. Add baking soda. 
  4. Sieve well and keep aside.
     

For the rum raisin mixture of plum cake

  1. In another deep bowl, add the raisins. Roughly chop them before adding. 
  2. Add chopped black raisins too. Both these raisins give natural sweetness and a very good mouthfeel too. 
  3. Further add chopped sweet cherries. You can also add chopped dried apricots, cranberries, prunes etc also if you wish to. 
  4. Add tutti frutti also. 
  5. Add ½ cup of rum to make X mas rum and raisin cake. As a replacement to rum, you can use ½ cup of orange juice. This can be readymade or fresh. 
  6. Mix well using a spoon. 
  7. Cover it with a lid and keep aside for 24 hours. This will help the ingredients to soak the aroma, taste and flavours of rum. 

How to make plum cake

  2. Add condensed milk to it. This is used since there are no eggs in this recipe. 
  3. Mix well using a whisk till smooth. You can also use an electric beater if you wish to. The mixture should be free of lumps. 
  4. Add the sieved flour mixture gradually into this bowl. 
  5. Fold gently using a spatula. Do not mix it very vigoruously.
  6. To this add the cinnamon powder. 
  7. Add nutmeg powder. 
  8. To give nice rich brown colour to Christmas eggless plum cake, add cocoa powder. 
  9. Add vanilla essence for flavour. 
  10. Add soaked rum raisin mixture. 
  11. Add mixed nuts like walnuts, cashew nuts and almonds. 
  12. To give a zesty feel, add some orange rind. 
  13. Mix well using a spatula.
  14. Add the orange juice (approx. 5 to 6 tbsp) little by little to adjust the consistency of X mas rum and raisin cake. The batter should be of dropping consistency. 
  15. Take a greased 200 mm. (8") aluminum tin and line it with butter paper, so demoulding becomes easier. We have used rectangular tin, but if you wish you can use a round tin as well. 
  16. Transfer the mixture into the tin. 
  17. Tap it lightly to even out the mixture. 
  18. Bake in a pre-heated oven at 180°C (360°F) for 35 to 40 minutes.
  19. Cool the fruit cake slightly, loosen the edges using a knife and demould it by inverting the tin over a board and tap gently to unmould the cake.
  20. Remove the butter paper and discard it. 
  21. Turn the cake upside down. 
  22. Brush the loaf with little sugar syrup and keep aside for 10 to 15 minutes. This is to make the plum cake soft. 
  23. Cut into thick slices.
