Ingredients
for Indian Pina Colada Sorbet
3 cups pineapple cubes
2 tbsp sugar
1/4 cup thick coconut milk (nariyal ka doodh)
1/4 cup fresh tender sliced coconut
1/2 tsp lemon juice
For the garnish
A sprig of mint leaves (pudina)
4 pieces sliced pineapple
Method
for Indian Pina Colada Sorbet
- Combine all the ingredients and blend in a mixer till smooth.
- Pour the juice in an air-tight container and freeze for over night.
- Just before serving, remove from freezer.
- Scrape the frozen juice using a fork and serve equal quantities of sorbet in 4 cups.
- Garnish each cup with a pineapple wedge and mint leaves and serve immediately
