A delicious salad of cooked shell pasta and soft, succulent paneer cubes dressed in a mixture of walnuts, garlic and basil leaves perked up with lemon juice. Olive oil leaves an indelible mark on this refreshing salad, while walnuts bring in their characteristic saltiness and crunch. You will love the sharp yet soothing notes of basil too.

Ingredients
Main Ingredients
3 cups cooked conchiglie ( shell pasta)
1/2 cup paneer (cottage cheese) cubes
To Be Mixed Into A Pesto Dressing
1/2 cup finely chopped walnuts (akhrot)
1/2 cup chopped basil
2 tbsp grated garlic (lehsun)
3 tbsp lemon juice
5 tbsp olive oil
salt to taste
Method
- Combine the conchiglie and paneer in a deep bowl, mix well and refrigerate for at least 1 hour.
- Just before serving, add the pesto dressing to the pasta-paneer mixture and toss gently.
- Serve immediately.

Walnut pesto was an interesting combination... and a great variation the the classic Pine nut pesto recipe... also the paneer was a great addition.. the flavors were simple yet so aromatic... the freshness of the basil... the nuttiness from the walnuts and the punch from the garlic and olive oil was a great experience.
