  1. Heat the butter in a deep pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add 3 cups of water and salt, mix well and cover and cook on a medium flame for 8 minutes.
  3. Allow the mixture to cool completely and blend in a mixer to a smooth mixture.
  4. Transfer the mixture into a deep pan, add the white sauce and pepper, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  5. Serve hot.

very simple basic onion soup. Can be changed with a choice of vegetables like cauliflower, spring onions and carrots. Its packed with flavour and is quite filling as well.
