buckwheat dosa known as kuttu dosa is an instant buckwheat dosa which requires no fermentation. Here is an easy and healthy Indian buckwheat crepes prepared with buckwheat and urad dal.
The twist here is that the ingredients are powdered, tempered and then mixed into a batter, which can be cooked immediately into yummy buckwheat dosas.

Ingredients
For Buckwheat Dosas
1 cup buckwheat (kuttu or kutti no daro)
1/4 cup urad dal (split black lentils)
1 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)
2 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
salt to taste

For Serving With Buckwheat Dosas
Method
- To make buckwheat dosas, combine the buckwheat and urad dal in a mixer and blend to a fine powder.
- Transfer the powder in a deep bowl and keep aside.
- Heat the oil in a small pan and add the mustard seeds.
- When the seeds crackle, add the asafoetida and sauté on a medium flame for a few seconds.
- Add the tempering, green chillies, coriander, salt and approximately 3 ¼ cups of water and mix well.
- Heat a non-stick tava (griddle) and grease it lightly with oil.
- Pour a ladleful of batter in a circular manner. Pour a little oil in the holes of the buckwheat dosa and cook on both the sides till golden brown in colour.
- Repeat step 7 to make 19 more buckwheat dosas.
- Serve the buckwheat dosas immediately with green chutney.

Now, add the urad dal. Apart from adding to the health benfits, it makes the Buckwheat Dosa crispy.

Blend both the ingredients to a fine powder.

Take a deep bowl and put the powder into it. Keep aside.

Now, let’s make the tempering to flavour the batter of the Buckwheat Dosa. Heat the oil in a small pan or a tadka pan and add the mustard seeds into it.

Add the asafoetida into the pan and sauté on a medium flame for a few seconds.

Add the tempering straight into the bowl with the buckwheat-urad dal powder.

Now,add the green chillies for the spice.

Add the coriander for a hint of freshness.

Also, add the salt to taste.

Add about approximately 3¼ cups of water and mix well. The batter of the Buckwheat Dosa should be thin.

Yes, but we could not suggest you to store it more than 3-4 hours as then the batter would start fermenting! and store it in a refrigerator, thaw it whenever you''d want to use it within 3-4 hours and adjust constitency with the help of water if thick and more flour if thin.
