French Fries – that’s all that is predictable about this recipe, which is totally new, totally mouth-watering, totally mind-blowing!

In the Mexican French Fries, regular potato fries are given an awesome Mexican touch by bathing them with a chunky salsa and gooey cheese sauce.

In every bite, make sure you get a mix of all three in, because the combination is really too good. One thing about this recipe is that you need to make both the French fries and the cheese sauce just before serving and not in advance.

The French Fries if made too early will get soggy, while the cheese sauce will become thick.

If you are short of time and have to make the cheese sauce in advance, add some milk and boil for a minute before using it. The salsa can be made in advance if required.

Ingredients

For The French Fries
2 1/2 cups frozen french fries
oil for deep-frying
salt and freshly ground black pepper (kalimirch) to taste

For The Salsa
2 tsp oil
1/4 cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped capsicum
1/2 cup blanched and finely chopped tomatoes
1 tsp dry red chilli flakes (paprika)
2 tbsp tomato ketchup
salt to taste

For The Cheese Sauce
4 britannia cheese slices
5 tbsp milk
a pinch of salt

For The Topping
1/4 tsp dry red chilli flakes (paprika)
1/4 tsp dried oregano
Method

  1. Heat the oil for deep-frying in a deep non-stick pan and deep-fry the french fries a few at a time till they turn golden brown and crisp in colour. Drain on an absorbent paper.
  2. Sprinkle a little salt and pepper evenly over it and toss well. Keep aside.

For the salsa

    For the salsa
  1. Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute.
  2. Add the capsicum and sauté on a medium flame for 1 minute.
  3. Add the tomatoes, chilli flakes, tomato ketchup and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

For the cheese sauce

    For the cheese sauce
  1. Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 1 to 2 minutes or till the cheese melts, while stirring occasionally. Keep aside.

How to proceed

  1. Place the deep-fried french fries on a serving plate and pour the prepared cheese sauce and salsa evenly over it.
  2. Top it with chilli flakes and oregano evenly over it.
  3. Serve immediately.

  1. For the Mexican salsa, heat 2 tsp oil in a broad non-stick pan.
  2. Add 1/4 cup finely chopped onions.
  3. Add 1 tsp finely chopped garlic (lehsun).
  4. Sauté on a medium flame for 1 minute.
  5. Add 1/4 cup finely chopped capsicum.
  6. Sauté on a medium flame for 1 minute.
  7. Add 1/2 cup blanched and finely chopped tomatoes.
  8. Add 1 tsp dry red chilli flakes (paprika).
  9. Add 2 tbsp tomato ketchup.
  10. Add salt to taste.
  11. Mix well and cook on a medium flame for 1 minute, while stirring occasionally. 
  12. Mexican salsa is ready. 

for the cheese sauce

  1. For the cheese sauce, add 5 tbsp milk in a broad non-stick pan.
  2. Add 4 britannia cheese slices.
  3. Add a pinch of salt. The cheese slices have salt, so add salt wisely.
  4. Mix well.
  5. Cook on a medium flame for 1 to 2 minutes or till the cheese melts, while stirring occasionally. Keep aside.

  1. We have used readymade frozen French fries in this recipe to save time. But if you wish you can make French fries at home.
  2. For really crisp French fries, use the variety of potatoes with a higher starch content popularly known as French fries potatoes /chips potatoes. In Maharashtra, they are called Talegaon potatoes.
  3. The cheese sauce might thicken with time. So don't make too much in advance. If you are short of time and have to make the cheese sauce in advance, add some milk and boil for a minute before using it.
  4. However the Mexican salsa can be made in advance and refrigerated.  
  5. Oregano for the topping can be replaced with dried mixed herbs.
