For gula ruti- To make gula ruti recipe, heat ½ tsp oil in a broad non-stick pan, add mustard seeds, panch phoron, green chillies, curry leaves and chana dal. Sauté for a few seconds.
- Add carrot and sauté on medium flame for a minute, add onions and sauté on medium flame for 2 minutes.
- Add tomatoes and cook on medium flame for 2 minutes. Switch off the flame, add coriander and mix well. Keep aside.
- In a deep bowl, add wheat flour, cooked veggies mixture, salt to taste and 1¼ cups of water. Mix well it no lumps remain.
- Heat a non-stick tava, grease it well using 1/8 tsp oil, pour a ladleful of batter on a hot tava and lightly spread it to make 150 mm (6 inch) ruti.
- Cook the gula ruti on medium flame using ¼ tsp oil until golden brown in colour on both the sides.
- Repeat steps 5 and 6 without greasing the tava to cook remaining 7 gula rutis.
- Serve the gula ruti hot with green chutney.

Add ¼ cup finely chopped carrot. The finely chopped carrots will add a bit of crunch to the gula ruti, making it more interesting to eat.

Switch off the flame, add 3 tbsp finely chopped coriander.
