For the white sauce- Put the butter in a broad non-stick pan, when hot add the plain flour and cook on a medium flame for 1 minute.
- Add the milk, whisk till smooth and without lumps and cook on a medium flame for 3 to 4 minutes.
- Add the salt and pepper and mix well till smooth. Use as required.
How to proceed to make cheesy penne pasta- Combine the mozzarella cheese and processed cheese and keep aside.
- Combine the penne, white sauce, parsley, oregano, chilli flakes , salt and pepper, and mix well.
- Grease a shallow dish using ½ tsp of butter and spread the penne mixture in it.
- Top with the cheese mixture.
- Dot it with the remaining 2 tsp of butter and microwave on high for 3 minutes or bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
- Serve the cheesy penne pasta immediately.

For boiling the penne pasta perfectly, boil ¾ cups of water in a large pan. If you use a small pan, the pasta will clump together on boiling.

Cover the pan with a lid to make the water boil faster.

Once the water boils vigorously, add salt. The salt will season the penne pasta as they cook, which will give you flavorful pasta. Also, the water when tasted should taste like seawater.

Add the pasta to the boiling water and stir once.

Cook uncovered, stirring occasionally and gently until the pasta is tender. Cooking times may vary with the size and the thickness of the pasta. Very small pasta (like macaroni, fusilli, conchiglie, penne) may cook in 5 to 7 minutes. Larger shapes (like spaghetti, fettuccine, dried lasagne sheets) may require 10 to 12 minutes. Refer to the package instructions to understand the exact cooking time. This being a quick and easy cheesy pasta recipe, you may even choose to boil the pasta in a microwave

After 5 to 7 minutes, remove one pasta out of the water and keep it aside to cool a little. Bite into the pasta or break it with a fork to check if it's still hard in the center or if it's cooked as you like. For perfectly cooked pasta, cook until it's al dente, which means it is a little firm in the center.

Immediately drain the cooked pasta into a sieve or colander.

Transfer to a bowl of cold water or refresh under running water to prevent overcooking.

Drain again and keep aside.

If the pasta is not to be used immediately, add 1 tablespoon of olive oil to it and toss it. Though it makes difficult for the pasta to absorb/coat the cheese sauce.

Once the butter has melted, add the plain flour.

Cook on a slow flame for 1 to 2 minutes, while stirring continuously with the help of a whisk. This is called as a roux which acts a thickening agent for the White Sauce. The frequent stirring helps in even cooking of the flour apart from preventing it from forming lumps.

Once you see the flour has become a little froth and golden in colour, reduce the flame to low and add the milk. Pour the milk with one hand and whisk using the other hand. If you are vegan or allergic to dairy products, then use almond milk.

Whisk well and cook on a medium flame for 3 to 4 minutes, or till the White Sauce thickens, while stirring continuously. It is very important to mix continuously after you add the milk and whisk until the flour and milk have incorporated well. If not whisked well, you might get lumps in your White Sauce.
