Ingredients

For Baingan Bhaja
18 big brinjal (baingan / eggplant) slices
2 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1 tbsp lemon juice
1/4 cup besan (bengal gram flour)
salt to taste
2 tsp oil for greasing and cooking
Method

  1. To make baingan bhaja, combine the chilli powder, turmeric powder, lemon juice, besan, salt and 2 tbsp of water in a deep bowl and mix well.
  2. Add the baingan slices and mix well. Keep aside.
  3. Heat a non-stick tava (griddle), grease it with ½ tsp of oil, arrange half the baingan slices and cook using ½ tsp of oil on both the sides till golden brown in colour.
  4. Repeat step 3 to make 1 more batch.
  5. Serve the baingan bhaja immediately.

How to make baingan bhaja

  1. To make baingan bhaja recipe | Bengali begun bhaja | healthy eggplant snack | how to make healthy begun bhaja, wash the brinjal and chop off the stalk. Make use of a large thick variety of brinjal for the baingan bhaja recipe. Ensure it is not very heavy in weight. Because heavyweight indicates more seeds. Slice the washed aubergine into thick slices of 1-2 cm thickness. Cut them uniformly to cook them evenly. Keep aside.
  2. For the coating of Bengali begun bhaja, combine the chilli powder.
  3. Add turmeric powder.
  4. Add lemon juice.
  5. Add besan. Many people even make use of rice flour to give a crispy texture to the healthy eggplant snack.

  6. Add salt and ¼ cup of water.
  7. Mix well and keep aside. You can use a whisk or a spoon.
  8. Add the baingan slices.
  9. Mix well rubbing the spice mix with your fingers so the brinjal slices are evenly coated. Our coating mixture for authentic Bengali begun bhaja is ready. Keep aside.
  10. To cook baingan bhaja, heat a non-stick tava (griddle) and grease it with ½ tsp of oil. For an authentic Bengali flavour, make use of mustard oil instead of regular vegetable oil.
  11. Arrange few baingan slices on the hot tava. You can also arrange half the baingan slices at a time if you have a big tava.
  12. Drizzle ½ tsp of oil on and around the brinjal slices.
  13. Cook the begun bhaja on both the sides till golden brown in colour.
  14. Remove the baingan slices individually and transfer to a plate.
  15. Repeat step 10 to 14 and cook 1 more batch of baingan bhaja.
  16. Serve baingan bhaja immediately. You can make a wide variety of healthy dishes using brinjals like Baingan Methi Subzi and Grilled Eggplant in Olive Oil and Sea Salt.
