Ingredients
For Aloo Baingan Masala
3 tbsp oil
1 small cinnamon (dalchini) stick
1/2 tsp cumin seeds (jeera)
1 tsp finely chopped green chillies
1/2 cup thinly sliced onions
1/2 tbsp ginger-garlic (adrak-lehsun) paste
1/4 cup chopped tomato
1/2 cup tomato pulp
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
1 tsp coriander-cumin seeds (dhania-jeera) powder
1/2 tbsp onion garlic masala powder
1 cup potato cubes
2 cups brinjal (baingan / eggplant) cubes
salt to taste
1 tbsp finely chopped coriander (dhania)
Method
- To make aloo baingan masala, heat oil in a pressure cooker, add the cinnamon, bayleaf and cumin seeds, saute for a few seconds.
- Add onions and saute on medium flame for 2 minutes. Add ginger-garlic paste and saute for a minute.
- Add tomatoes and cook on medium flame for 2 minutes.
- Add the tomato pulp, turmeric powder, chilli powder, coriander cumin seeds powder and kanda lasun masala.
- Mix well and cook on medium flame for 2 minutes, while stirring occasionally.
- Add potato cubes, brinjal cubes, salt to taste, 3/4 cup hot water, coriander and mix well.
- Cover with a lid and pressure cook for 2 whistles.
- Allow the steam to escape and then open the lid.
- Serve aloo baingan masala hot with roti or rice of your choice.
