At home in Mumbai, we always make our Indian style whole wheat pizza base in bulk. We cling wrap and keep it in the freezer for upto 15 days. We suggest you also try our homemade pizza sauce recipe where you should remove the cooked onions and then freeze it for upto 30 days. So you can make pizzas at any time with Indian style whole wheat pizza base and pizza sauce.

To make whole wheat pizza base, combine 1/4 cup of lukewarm water, instant dry yeast and sugar in a bowl and mix well. Cover with a lid and keep aside for 5 minutes. Combine the whole wheat flour, yeast-water mixture, olive oil, sugar and salt in a deep bowl and knead into a soft dough using enough water. Cover the dough with a wet muslin cloth and keep for 1 hour. Roll the dough into 7” pizza base and bake them at 180°C (360°F) for 10 minutes. Pizza base is ready to make pizza.

This 100% whole wheat pizza dough is healthier than maida bases pizza base, as maida is refined and this devoid of many nutrients. However, considering the quantity of wheat flour that goes into making a pizza base, it is yet not considered completely low calorie. So watch your portion size.

Pizzas do not necessarily have to be round. Some are large ovals, some are square and others known as pizzettes are baked as smaller individual circles. So you can shape the easiest whole wheat pizza base base the way you like! In fact, the smaller the size, the easier it will be to control your portion intake.

  5. Press the dough lightly to remove the air and divide the dough into 4 equal portions.
  6. Roll each portion into a 175 mm. (7”) diameter circle with the help of whole wheat flour for rolling and prick each circle evenly using a fork.
  7. Place 2 circles on a greased baking tray and bake in a pre-heated oven at 180°c (360°f) for 10 minutes.
  8. Repeat step 7 to bake 2 more whole wheat pizza base.

  1. What is whole wheat pizza base recipe made off? Indian style whole wheat pizza base is made from easily available 4 simple ingredients in India like 1 1/2 cups whole wheat flour (gehun ka atta), 1 tsp dry yeast, 1 tbsp olive oil, 1 tsp sugar and salt to taste.

Note on instant dry yeast

  1. This is what instant dry yeast looks like. We store it in our fridge for 3 months. Instant yeast is available in small granules and acts similar to dry yeast. Since, it is milled into finer particles, they dissolve faster and activate rapidly. There is no need to proof them and it can be directly added to the dry ingredients(flour).

Preparing yeast water mixture

  1. In a small glass bowl put 1/4 cup of lukewarm water.
  2. Add 1 tsp instant dry yeast.
  3. Add 1 tsp sugar.
  4. Mix well.
  5. Cover with a lid and keep aside for 5 minutes.
  6. This is what the yeast water mixture looks like after 5 to 7 minutes. Ours took 7 minutes.

Making whole wheat pizza base

  1. In a glass bowl put 1 1/2 cups whole wheat flour (gehun ka atta).
  2. Add yeast-water mixture.
  3. Add 1 tbsp olive oil.
  4. Add salt to taste.
  5. Add enough water to make a soft dough. We added 1/4 cup twice while making the dough for a total of 1/2 cup water.
  6. Knead into a soft dough with your hands. This can take 6 minutes and up to do so. 
  7. The dough should be pliable.
  8. Cover the dough with a wet muslin cloth and keep aside for 1 hour.
  9. This is what the dough looks like. It has doubled in size.
  10. Press the dough lightly to remove the air. Also you can open it up to see the texture and then knead again to make the dough.
  11. Knead back into a dough.
  12. Divide the dough into 4 equal portions.

Baking whole wheat pizza base.

  1. Dust a rolling board with some whole wheat flour.
  2. Flatten the dough and put some whole wheat flour over it.
  3. Roll each portion into a 175 mm. (7”) diameter circle with the help of whole wheat flour for rolling.
  4. Prick each circle evenly using a fork.
  5. Pre heat and oven at at 180°c (360°f) for 10 minutes. Place 2 circles on a greased baking tray
  6. Bake in a pre-heated oven at 180°c (360°f) for 10 minutes. Repeat again to make 2 more whole wheat pizza bases.
  7. Flip one side of the pizza base to see if done. The brown colour shows you base is ready to make pizza.

Veg paneer pizza with whole wheat pizza base

  1. To make Veg paneer pizza with whole wheat pizza base | healthy veg paneer pizza |  bake pizza base in a pre-heated oven at 180°c (360°f) for 10 minutes. Repeat again to make 2 more whole wheat pizza bases.
  2. Top with 1/4 cup homemade pizza sauce on each pizza base. 
  3. Top with a tablespoon of vegetables of your choice on the pizza. We used coloured capsicum, chopped onions and some sliced mushrooms. You could also cook the vegetables in olive oil with chilli flakes and then use on your pizza.
  4. Top your pizza with grated paneer. We used 2 to 3 tablesppons of paneer.
  5. Bake in a preheated over at 180 C for 10 to 15 minutes. 
  6. I baked for 15 minutes to ensure the whole wheat crust was crisp and the paneer had baked to a light brown colour. Serve Veg paneer pizza with whole wheat pizza base | healthy veg paneer pizza |  hot.

Hi Can I use any other oil if I don’t have olive oil. I have only extra vergin olive oil. Can I use it.

Nice recipe but preparation time is over 1 hour, not 17 minutes... Also in the description it says 15 minutes baking and the instructions say 5 minutes
