For spicy vegetable pulao
  1. To make spicy vegetable pulao, heat the ghee in a deep non-stick pan, add the prepared paste and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  2. Add the mixed vegetables, green peas, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the rice and deep-fried onions, mix well and cook on medium flame for 2 minutes, while stirring occasionally.
  4. Serve the spicy vegetable pulao hot garnished with deep-fried onions and coriander.

    1. In a mixer put garlic (lehsun) cloves.
    2. Add whole dry kashmiri red chillies , broken into pieces. Kashmiri red chillies give a lovely colour to the rice.
    3. Add 25 mm (1") piece of ginger (adrak).
    4. Add 1 tbsp coriander (dhania) seeds.
    5. Add 1 tsp cumin seeds (jeera).
    6. Add 1/2 cup of water to make a smooth paste.
    7. Blend into a smooth paste.
    8. Keep aside spicy paste. Look at the colour as it's so good due to the Kashmiri chillies.

    1. Heat 2 tablespoons ghee in a deep non-stick pan. Use ghee to make spicy vegetable pulao as it gives a nice flavour. Don't cook in oil.
    2. Add the prepared spicy paste. If you don't want the pulao spicy, reduce the quanitiy of chillies used.
    3. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    4. Add 1 cup boiled mixed vegetables (french beans and carrot) cubes.
    5. Add 1/2 cup boiled green peas.
    6. Add salt to taste. We added xx tsp salt. 
    7. Add 2 tbsp of water.
    8. Mix well.
    9. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    10. Add 3 cups cooked Basmati rice or cooked rice.
    11. Add 1/2 cup deep-fried onions.
    12. Mix well.
    13. Cook on medium flame for 2 minutes, while stirring occasionally.
    14. Serve hot garnished with deep-fried onions and coriander.
