Ingredients
For Spicy Vegetable Pulao
1 cup boiled mixed vegetables (french beans and carrot) cubes
1/2 cup boiled green peas
3 cups soaked and cooked long grain rice (Basmati chawal) or
2 tbsp ghee
salt to taste
To Be Ground Into A Smooth Paste (using 1/2 Cup Of Water)
7 whole dry Kashmiri red chilli , broken into pieces
1 tsp chopped ginger (adrak)
1 tbsp coriander (dhania) seeds
1 tsp cumin seeds (jeera)
For The Garnish
2 tbsp finely chopped coriander (dhania)
Method
- To make spicy vegetable pulao, heat the ghee in a deep non-stick pan, add the prepared paste and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the mixed vegetables, green peas, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the rice and deep-fried onions, mix well and cook on medium flame for 2 minutes, while stirring occasionally.
- Serve the spicy vegetable pulao hot garnished with deep-fried onions and coriander.

In a mixer put 7 garlic (lehsun) cloves.

Add 7 whole dry kashmiri red chillies , broken into pieces. Kashmiri red chillies give a lovely colour to the rice.

Add 25 mm (1") piece of ginger (adrak).

Add 1 tbsp coriander (dhania) seeds.

Add 1 tsp cumin seeds (jeera).

Add 1/2 cup of water to make a smooth paste.

Blend into a smooth paste.

Keep aside spicy paste. Look at the colour as it's so good due to the Kashmiri chillies.

Heat 2 tablespoons ghee in a deep non-stick pan. Use ghee to make spicy vegetable pulao as it gives a nice flavour. Don't cook in oil.

Add the prepared spicy paste. If you don't want the pulao spicy, reduce the quanitiy of chillies used.

Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

Add 1 cup boiled mixed vegetables (french beans and carrot) cubes.

Add 1/2 cup boiled green peas.

Add salt to taste. We added xx tsp salt.

Add 2 tbsp of water.

Mix well.

Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

Add 3 cups cooked Basmati rice or cooked rice.

Add 1/2 cup deep-fried onions.

Mix well.

Cook on medium flame for 2 minutes, while stirring occasionally.

Serve hot garnished with deep-fried onions and coriander.
