Being a one pot dish, they are very easy to prepare on busy days. Biryani masala brings in a lot of flavors and makes it taste top-notch than your regular pulao. I have also added barista (fried onions) in the pulao. Fried onions caramelize, releasing natural sugars that add a rich, nutty sweetness to the dish.

Ingredients
For Paneer Pulao
1 1/4 cups rice (chawal) , soaked for 1 hour and drained
2 cups paneer (cottage cheese) cubes
2 tbsp oil
1 tbsp ghee
1 tsp cumin seeds (jeera)
1 black cardamom (badi elaichi)
1 cinnamon (dalchini) stick
1 cup thinly sliced onions
1 tbsp ginger-garlic (adrak-lehsun) paste
1 tbsp diagonally chopped green chillies
45659 thinly sliced tomatoes
1/4 cup curd (dahi)
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
2 tsp coriander-cumin seeds (dhania-jeera) powder
1/4 cup fried onions
2 tbsp chopped mint leaves (phudina)
2 tbsp finely chopped coriander (dhania)
salt to taste
Method
For paneer pulao
- To make paneer pulao recipe, heat 1 tbsp oil in a broad non-stick pan, add the paneer cubes.
- Fry on a medium flame for 2 to 3 minutes until light golden brown from all the sides. Keep aside.
- Heat the oil and ghee in a pressure cooker, add cumin seeds, bay leaf, black cardamom, cinnamon and star anise. Mix well.
- Add the onions and sauté on a medium flame for 2 to 3 minutes or till the onions turn light golden brown in colour.
- Add the ginger-garlic paste and green chillies and sauté on a medium flame for another 1 minute.
- Add the tomatoes and sauté again for 2 minutes. Add curd, turmeric powder, chilli powder, coriander-cumin seeds powder, biryani masala, fried onions, mint leaves and coriander.
- Mix well and cook on a medium flame for 2 to 3 minutes.
- Add the rice, fried paneer, salt to taste and 2 cups of hot water. Mix well and pressure cook on a medium flame for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serve the paneer pulao hot.

Add the soaked and drained rice and sauté for another 1 minute.

Likewise, add the paneer and sauté for 1 more minute.

Now put 2 cups of hot water, salt and sugar. Adding sugar will enhance the taste of your Paneer Pulao.

Add garam masala and give it a stir. Always taste the water when you cook the rice for salt and spices.

Add the curds and mix well.

Pressure cook for 2 whistle. Allow the steam to escape naturally before opening the lid. Mix your paneer pulao | paneer rice | quick paneer pulao in a pressure cooker | well with the help of a spatula or a wooden spoon.

Hi Sham, Just follow the exact recipe to get a very nice product. The paneer will not get mashed as they are cut into cubes , just when you mix make sure you mix it gently.
