  1. To make paneer pulao recipe, heat 1 tbsp oil in a broad non-stick pan, add the paneer cubes.
  2. Fry on a medium flame for 2 to 3 minutes until light golden brown from all the sides. Keep aside.
  3. Heat the oil and ghee in a pressure cooker, add cumin seeds, bay leaf, black cardamom, cinnamon and star anise. Mix well.
  4. Add the onions and sauté on a medium flame for 2 to 3 minutes or till the onions turn light golden brown in colour.
  5. Add the ginger-garlic paste and green chillies and sauté on a medium flame for another 1 minute.
  6. Add the tomatoes and sauté again for 2 minutes. Add curd, turmeric powder, chilli powder, coriander-cumin seeds powder, biryani masala, fried onions, mint leaves and coriander.
  7. Mix well and cook on a medium flame for 2 to 3 minutes.
  8. Add the rice, fried paneer, salt to taste and 2 cups of hot water. Mix well and pressure cook on a medium flame for 2 whistles.
  9. Allow the steam to escape before opening the lid.
  10. Serve the paneer pulao hot.

  3. Fry on a medium flame for 2 to 3 minutes until light golden brown from all the sides. Keep aside.

  7. Add 1 bay leaf (tejpatta).

  9. Add 1 cinnamon (dalchini) stick. Cinnamon is a warm and fragrant spice that adds a layer of complexity to the dish.

  11. Mix well.
  12. Add 1 cup thinly sliced onions.
  13. Sauté on a medium flame for 2 to 3 minutes or till the onions turn light golden brown in colour.
  14. Add 1 tbsp ginger (adrak) garlic (lehsun) paste. Ginger and garlic have distinct aromas that add complexity to the dish.
  15. Add 1 tbsp chopped green chillies, diagonally chopped.
  16. Sauté on a medium flame for another 1 minute.
  17. Add ½ cup sliced tomatoes. The vibrant red color of the tomatoes adds a beautiful visual appeal to the dish.
  18. Sauté again for 2 minutes.
  19. Add ¼ cup curd (dahi). The tanginess of the curd balances the spiciness of the other ingredients in the pulao, creating a harmonious flavor profile. It prevents the dish from becoming overly spicy or bland.
  20. Add ½ tsp turmeric powder (haldi).
  21. Add 1 tsp chilli powder. Chilli powder is a crucial ingredient in paneer pulao as it adds a subtle heat and warmth to the dish. 
  22. Add 2 tsp coriander (dhania) cumin seeds (jeera) powder. Coriander and cumin powder create a harmonious blend of flavors that elevate the paneer pulao.
