For paneer pulao- To make paneer pulao recipe, heat 1 tbsp oil in a broad non-stick pan, add the paneer cubes.
- Fry on a medium flame for 2 to 3 minutes until light golden brown from all the sides. Keep aside.
- Heat the oil and ghee in a pressure cooker, add cumin seeds, bay leaf, black cardamom, cinnamon and star anise. Mix well.
- Add the onions and sauté on a medium flame for 2 to 3 minutes or till the onions turn light golden brown in colour.
- Add the ginger-garlic paste and green chillies and sauté on a medium flame for another 1 minute.
- Add the tomatoes and sauté again for 2 minutes. Add curd, turmeric powder, chilli powder, coriander-cumin seeds powder, biryani masala, fried onions, mint leaves and coriander.
- Mix well and cook on a medium flame for 2 to 3 minutes.
- Add the rice, fried paneer, salt to taste and 2 cups of hot water. Mix well and pressure cook on a medium flame for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serve the paneer pulao hot.
