Ingredients

For Paneer Methi Palak Sabzi
1 1/2 cups paneer (cottage cheese) cubes
1 1/2 cups chopped fenugreek (methi) leaves
5 cups chopped spinach (palak)
1 tbsp roughly chopped green chillies
1 tsp roughly chopped ginger (adrak)
1 tsp roughly chopped garlic (lehsun)
1 tbsp finely chopped garlic (lehsun)
2 tbsp oil
1 cup chopped onions
1 tsp sugar
1/2 cup milk
salt to taste

For paneer methi palak sabzi

    For paneer methi palak sabzi
  1. To make paneer methi palak sabzi, combine the spinach and fenugreek leaves in deep non-stick pan, mix well and cover with a lid and cook on a medium flame for 6 minutes, while stirring occasionally.
  2. Cool and blend in a mixer along with green chillies, ginger and garlic till smooth. Keep aside.
  3. Heat the oil in deep non-stick pan, add the garlic and saute on a medium flame for a few seconds.
  4. Add the onions and sauté on a medium flame for 2 minutes.
  5. Add the prepared spinach-fenugreek mixture and cook on a medium flame for 2 minutes,while stirirng occasionally.
  6. Add milk, mix well and cook on a medium flame for 2 minutes ,while stirring occasionally.
  7. Add the salt and paneer, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  8. Serve the paneer methi palak sabzi hot with parathas or rumali roti.

I love Palak Paneer....and adding methi to the recipe and use of low- fat paneer makes it more healthy and low in calorie...Perfect for weight watchers!
