A desi favourite transforms into a treat, taking a few hints from Mexican cuisine. Imagine a masala dosa, with a Mexican style baked beans filling and a garnish of cheese, instead of the traditional potato filling. Well, the outcome is a fabulous cheese Mexican dosa!
To make Mexican dosa, make the stuffing first. For that combine baked beans, spring onions, capsicum, chilli powder, tomato ketchup, red chilli sauce, cumin powder and salt and keep aside. Then, heat a non-stick tava (griddle), sprinkle a little water on it and wipe off using a piece of cloth. Pour a ladleful of the batter (approx. ¼ cup) on the tava (griddle) and spread in a circular motion to make a 150 mm. (6”) diameter circle. Spread 1 tsp of butter over it and cook on a medium flame till it turns slightly crisp and golden brown in colour. Place one portion of the stuffing in a row in the center and sprinkle 2 tbsp of cheese evenly over it. And fold it over from both the sides overlapping each other. Serve the mexican dosa immediately.

For mexican dosa- To make the mexican dosa, divide the stuffing into 6 equal portions. Keep aside.

- Repeat steps 2 to 5 to make 5 more mexican dosas.

To get crispier dosas, you can add some rice flour to the batter and mix well.

The dosa batter should be at room temperature always. So if you have stored the batter in the refrigerator, remove it and keep outside at least half an hour before making the dosas.

Also if you are an amateur, before making the dosas, season the tava. Grease the tava uniformly with very little oil or butter. Now sprinkle the water and wipe it off. The fat layer will form a protective layer which will prevent the dosa from sticking to the tava.

If you are finding it difficult to scrape out the dosa from the pan once it's ready, you can avoid it, by rubbing some raw onion to the pan before pouring the batter. This gives a non-sticky effect to the pan!

Add both spring onions whites and greens. Don’t limit yourself to these vegetables. You can even put corn kernels, grated carrots etc to the stuffing.

Add finely chopped capsicum. You can even toss in finely chopped bell peppers to make the stuffing more colorful.

Add chilli powder. Alternatively, you can add finely chopped green chillies. The quantity can be adjusted as per the level of spice you can handle.

Add the tomato ketchup and chilli sauce. The ketchup balances the flavor of the Mexican dosa stuffing with it’s tangy flavor.
