For the Topping

  1. Put the cheese spread in a deep bowl.
  2. To this, add the grated mozzarella cheese. The reason for adding 2 types of cheeses is that the cheese spread gives creaminess while mozzarella gives the stringy texture.
  3. Now add the finely chopped black olives. You can even cut them into slices but finely chopped olives are easier to spread on toast.
  4. Now add the finely chopped jalapenos. We have used the pickled jalapenos as the fresh ones would be very spicy. Both olives and jalapenos add a salty, sour taste to the toast.
  5. Add the mixed dried herbs. This is a prepacked mix sold which contains dried oregano, parsley, rosemary and thyme.
  6. Finally add the milk and salt.
  7. Mix well with a spoon till everything is evenly incorporated. Keep aside.

How to Proceed for the Toast

  1. Grease the baking tray with a little butter.
  2. Spread ½ tsp of butter on each bread slice and place it on the baking tray, with the buttered side facing upwards.
  3. Bake in a pre-heated oven at 200°C (400°F) for 10 minutes or till they turn crisp.
  4. Turn over the bread slices and spread little mixture evenly over each slice.
  5. Bake the slices again in a pre-heated oven at 200°C (400°F) for 15 minutes.
  6. Serve immediately as an evening snack with tomato ketchup or as an accompaniement with pasta dishes like Pasta Genovese.

I have tried all diffrent toppings on a toast but had never tried jalapenos with olives before. I love the way the melted mozerella tastes. Yummm. Such a nice cheesy and tangy taste. Perfect for a cocktail party or even as a snack.
