mixture of Chana Dal Seekh Kebabs

    1. Heat 1 tbsp coconut oil or oil in the same pan. Use coconut oil instead of processed seed oils like soyabean oil, canola, sunflower oil, corn oil and other omega-6 rich oils should be used in very low amounts.  Coconut oil is a medium chain triglycerides (MCT’s).
    2. Add 1/4 cup finely chopped cabbage. Cabbage serves as a common onion substitute in Jain cuisine. For non Jains, you can use chopped onions.
    3. Sauté on a medium flame for 1 to 2 minutes.
    4. Add 1 1/2 cups steamed raw banana slices. The starch in raw banana helps to bind the chana dal mixture together, giving the kebabs their shape and structure. Raw banana adds moisture to the kebabs, preventing them from becoming dry and crumbly. Non jains can replace steamed raw bananas with boiled and mashed potatoes.
    5. Add 1 1/2 tsp finely chopped green chillies.
    6. Add 1/4 cup finely chopped mint leaves (phudina). Mint imparts a vibrant and fresh flavor that complements the other ingredients. The coolness of mint helps to balance the heat from the spices used in the kebabs.
    7. Mix well.
    8. Cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
    9. Remove from the flame, cool and put in a mixer.
