For Aloo ki Sukhi Sabzi
2 cups boiled potato cubes
1 tbsp oil
1 tsp cumin seeds (jeera)
3 to 4 curry leaves (kadi patta)
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1 tbsp sugar
2 tsp lemon juice
salt to taste
2 tbsp finely chopped coriander (dhania)
Method
For aloo ki sukhi sabzi
- To make aloo ki sabzi
- When the seeds crackle add the curry leaves and sauté on a medium flame for 30 seconds.
- Add all the remaining ingredients, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

To make the dry aloo sabzi, scrub and wash the potatoes. Boil the potatoes in a pressure cooker over medium flame. You can also boil them in directly in a pot or a microwave. Add turmeric powder (haldi).

Add chilli powder. You can adjust the quantity as per the spice you can handle & if making for kids just reduce the amount.

Add some coriander-cumin seeds powder.

Add sugar and lemon juice for a sweet & tangy flavour.

Add salt to taste.

Finally, sprinkle some fresh coriander leaves.

This was just soo quick.. I had potatoes boiled from the previous day and all i had to do was just toss it and cook.. I added more of garlic as i love its flavour..and it was just bang on!! Do try it and enjoy with puris or roti..
