Ingredients

For Aloo Bomb Chaat
5 boiled potatoes
salt and freshly ground black pepper (kalimirch) to taste
1/4 tsp chaat masala
1 tbsp plain flour (maida) for coating
oil for deep frying

To Be Mixed Into A Stuffing
1/2 cup boiled mixed sprouts
1 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
1/4 cup finely chopped coriander (dhania)
2 tbsp pomegranate seeds (anardana)
2 tbsp fried masala chana dal
2 tbsp roasted salted peanuts
1 tbsp lemon juice
salt to taste
1/4 tsp chaat masala

For Assembling
5 tsp green chutney
2 1/2 tsp chilli garlic chutney
5 tbsp sweet chutney
1/4 cup nylon sev
fried masala chana dal for sprinkling
roasted peanuts for sprinkling
1 tbsp pomegranate (anar)
1 tbsp lemon juice
chaat masala for sprinkling
Method

    For aloo bomb chaat
  1. To make aloo bomb chaat recipe, cut the boiled potato in half and scoop the center of each potato half, using a spoon so that a light depression is formed for the filling.
  2. Sprinkle a little salt, pepper powder, chaat masala and plain flour. Gently coat the potatoes.
  3. Heat oil in a deep pan, and fry a few coated potatoes at a time. Deep fry them on a medium flame till light golden brown in colour.
  4. Drain them on an absorbent paper. Keep aside.

  3. Repeat steps 1 and 2 to make the remaining aloo bomb chaat.
  4. Serve aloo bomb chaat immediately.

Baked potatoes with a yummy paneer filling.

The paneer stuffing was just wow! I used only 1 tbsp of mint as it has a strong flavour, and added chopped onions to the garnish. Amazing response with kids and easy to cook for beginners too.
