achari chana pulao also known as pickled kabuli chana pulao is for those who love the complex interplay of spices in pickles, rice and kabuli chana. Learn how to make achari chana pulao easily. Achari in the name stands for pickle flavoured, this chickpea pulao is flavoured with pickle which makes the dish even interesting.
To make achari chana pulao rice, fortified with kabuli chana, is perked up with an interesting assortment of spices ranging from nigella and fenugreek to fennel seeds and black cardamoms, along with some readymade spice powders too.
But, the real twist in this pickled kabuli chana pulao recipe is the addition of a couple of spoons of aam ka achar, which gives a really sprightly flavour and aroma to the pulao.
Ingredients used to make achari chana pulao are basic and I am sure can be found in every Indian household. I usually prepare this one-pot quick meal on tiring and long days along with any raita and papad. Each and every member in my family simply loves achari chana pulao, not even my kids create a fuss while eating it. It is also a great tiffin treat or lunch box option.
achari chana pulao can be served simply with a cup of curd, or perhaps a bowl of dal like Dahiwali Toovar Dal , Dal Kadhi, Masoor Dal or Tamatar ki Kadhi.

Ingredients
For Achari Chana Pulao
1/2 cup soaked and boiled kabuli chana (white chick peas)
1 1/4 cups long grain rice (basmati chawal)
2 tbsp melted ghee
1 tsp fennel seeds (saunf)
1 tsp mustard seeds ( rai / sarson)
1 tsp fenugreek (methi) seeds
1 tsp nigella seeds (kalonji)
2 black cardamom (badi elaichi)
1/2 tsp cumin seeds (jeera)
1/2 tsp asafoetida (hing)
1/2 cup sliced onions
1 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/2 tsp garam masala
salt to taste
For The Garnish
2 tbsp chopped coriander (dhania)
Method
For achari chana pulao
- To make achari chana pulao, blend the mango pickle in a mixer to a coarse paste. Keep aside.
- Clean, wash and soak the rice for 10 minutes. Drain and keep aside.
- Heat the ghee in a pressure cooker, add the fennel seeds, mustard seeds, fenugreek seeds, nigella seeds, big cardamom, cumin seeds and asafoetida and sauté on a medium flame for a few seconds.
- When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the ginger-garlic paste, kabuli chana, turmeric powder, chilli powder, garam masala, salt and the prepared pickle paste, mix well and cook on a medium flame for 1 minute.
- Add the rice, mix well and cook on a medium flame for 1 minute.
- Add the 2½ cups hot water, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Serve achari chana pulao hot garnished with coriander.

To begin making the achari chana pulao, pick, clean and wash around 1 1/4 cup of rice thoroughly. You can use any variety of rice.

To prepare pickled Kabuli chana pulao, heat the ghee in a pressure cooker.

When the ghee is hot, add the fennel seeds.

Add mustard seeds.

Add fenugreek seeds.

Add nigella seeds.

Add big cardamom.

Add cumin seeds.

Add asafoetida and sauté on a medium flame for a few seconds or until you get a nice aroma.

Mix well and sauté on a medium flame for 1 to 2 minutes or until onions are translucent.

Add the ginger-garlic paste.

Add the soaked and boiled kabuli chana.

Add turmeric powder.

Add salt and the prepared pickle paste. It gives a slightly spicy and tangy flavor, justifying the word “achari” in our achari chana pulav.

Mix well and cook on a medium flame for 1 minute.

Add the 2½ cups hot water. It is important to use hot water since, we have drained the rice only for a few minutes & it will quicken the process of cooking. Also, different brands of basmati rice require a different amount of water. You can get the information about how much water is required on the backside of a rice packet to cook them perfectly.
- Mix well and pressure cook for 2 whistles.

Allow the steam to escape before opening the lid.
- Stir gently and check whether the rice grain is soft or not. If it is not soft, add some water and cook for some more time.

The best part of this recipe is that it is very quick. All we have to do is just put them all in the pressure cooker and whistle it. The common spices used in this recipe lends an amazing flavour to it. I carry it many times in my tiffin, when i am in a hurry to prepare something quick in the morning.
