A very different baked dish, which features a tangy tomato gravy upon a bed of spinach and paneer. The spinach and paneer layer has a very interesting texture due to the combination of crumbled paneer and blanched spinach.


The flavour and texture of the Spinach and Paneer in Tomato Gravy is further improved by sprinkling some grated cheese on top of the tomato gravy before baking. As the cheese melts and fuses into the tomato gravy, which in turn combines with the spinach and paneer mixture, you get a totally fabulous baked dish, which can be enjoyed as it is, or with toasted bread slices .

Ingredients

To Be Mixed Into A Spinach and Paneer Mixture
1 cup chopped and blanched spinach (palak)
3/4 cup crumbled paneer (cottage cheese)
1 1/2 tsp finely chopped green chillies
2 tbsp milk
salt to taste

For The Tomato Gravy
1 tbsp oil
1/4 cup finely chopped onions
3/4 cup fresh tomato pulp
1/2 tsp garlic (lehsun) paste
1/2 tsp chilli powder
1 tsp sugar
salt to taste

Other Ingredients
1/4 cup grated processed cheese
Method

For the tomato gravy

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 30 seconds.
  2. Add the tomato pulp, garlic paste, chilli powder, sugar and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside.

  1. In a baking dish, spread the spinach and paneer mixture evenly.
  2. Pour the prepared tomato gravy evenly over it and finally sprinkle the cheese.
  3. Bake in a pre-heated oven at 200°c (400°f) for 15 minutes.
  4. Serve immediately.

The ingredients are simple and ordinary but the end result is Wow!. Baking with a sprinkling of cheese makes it an extraordinary treat. My son enjoyed it with toasted bread. A satiating one-dish meal.

This is a very different recipe from the regular ones. A very easy and quick recipe. Once the tomato sauce is ready it just takes a few minutes. The combination of spinach with panner and tomato sauce can never go wrong.
