Ingredients

For The Base
2 cups plain flour (maida)
3/4 cup butter
1/2 tsp baking powder
2 1/2 tbsp vanilla custard powder
1 cup powdered sugar

For The Caramel
1 1/8 cups dark brown sugar
2 1/2 tbsp honey
3/4 cup butter
1 1/8 cups roasted unsalted peanuts
Method

For the base

    For the base
  1. Combine the butter and powdered sugar in a bowl and whisk well till smooth and fluffy.
  2. Add the flour, custard powder and baking powder and mix well and knead into a crumbly dough.
  3. Grease and line a 18 cm square tin and press the dough onto the base to even thickness.
  4. Cover the tin with foil and bake in a pre-heated oven for 1 15 minutes.

For the caramel layer

  1. Chop the roasted peanuts and keep aside.
  2. Heat a pan, add the butter, brown sugar and honey, mix well and when the mixture starts boiling, cover and simmer for 5 minutes.
  3. Add the chopped peanuts and mix well.
  4. Remove from the flame and keep aside.

How to serve

    How to serve
  1. Remove the foil from the tin and pour the peanut caramel over the base immediately.
  2. Bake for more 10 minutes without foil.
  3. Cool and invert the pie on to a plate, remove the lining and flip it again to bring the caramel layer to the top.
  4. Cut into squares and serve.
