For the paneer stuffing
 

  1. Heat the oil in a broad non-stick pan, add the garlic, green chillies, onions and capsicum and sauté on a medium flame for 2 minutes.
  2. Add the schezwan sauce, tomato ketchup, soy sauce and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously.
  3. Add the paneer and spring onion greens, mix well and cook on a medium flame for 1 minute, while stirring occasionally.


How to proceed
 

  1. To to make paneer schezwan frankie, divide the paneer stuffing into 7 equal portions. Keep aside.
  2. Heat a non-stick tava (griddle) and cook a flour tortilla using a ½ tsp of butter till brown spots appear on both the sides.
  3. Place a flour tortilla on a clean, and dry surface and put 1 tsp of chilli sauce and spread it evenly over it.
  4. Put one portion of the prepared paneer stuffing on one side , and top it with 1 tbsp of cabbage evenly over it.
  5. Fold from any one side and roll it up tightly.
  6. Repeat steps 2 to 5 to make 6 more paneer schezwan frankies.
  7. Serve the paneer schezwan frankie immediately.

For the paneer stuffing

 

    1. To make paneer stuffing for paneer schezwan, heat the oil in a broad non-stick pan.
    2. Once the oil is hot, add the garlic.
    3. Add green chillies. Toss in some ginger if you like a zesty yet sweet and warm flavour.
    4. Add onions.
    5. Add capsicum. Make use of any crunchy vegetables like baby corn, purple cabbage, bell pepper, cabbage, carrot to give a nice bite to the spicy schezwan paneer roll.
    6. Mix well and sauté on a medium flame for 2 minutes.

    2. Cook the tortilla using a ½ tsp of butter till brown spots appear. Do not apply too much butter or else the roti will turn crispy and break while rolling.
    3. Flip and cook the tortilla on both sides until golden brown. If not preparing schezwan paneer Frankie immediately, stack the cooked tortillas one above another, this will help in maintaining the softness and prevents them from drying out.
    4. Remove carefully and place a flour tortilla on a clean, and dry surface. You can also make use of leftover roti or make Chapati For Making Wraps & use it to make schezuan paneer rolls.

    8. Fold schezwan paneer roll from any one side and roll it up tightly.

Frankie one of my favourite snack.. Always used to eat from outside stores.. now i have learn to make this at home..Its spicy.. its chatpata.. wow.. great recipe.. Made this with left over rotis..

Really tasty !! I had no soy and chilly sauce. But I added dried oregano n mexican seasoning while making stuffing. I used rotis instead of tortilla and spread pizza sauce instead of chilly sauce.added cheese before spreading cabbage on the stuffing. wow it was awesome !!!
