For Paneer Fried Rice
3 cups cooked long grain rice (basmati chawal)
1 1/2 tbsp oil
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
2 tsp finely chopped green chillies
1/4 cup finely chopped carrot
1/4 cup finely chopped french beans
1/4 cup finely chopped capsicum
1/2 cup finely chopped spring onions whites and greens
1/2 tsp soy sauce
1 tsp red chilli sauce
salt to taste

For The Marinated Paneer
1 cup paneer (cottage cheese) cubes
1 tsp soy sauce
2 tsp red chilli sauce
1 tbsp cornflour
salt and to taste
1 tbsp oil

For The Garnish
1 tbsp finely chopped spring onions whites and greens

How to cook long grained rice

  1. Soak ¾ cup of rice in enough water for 30 minutes. Drain well.
  2. Boil 4 cups of water in a deep pan.
  3. Add the soaked and drained rice, salt and ½ tbsp oil, mix well and cook on a medium flame for 8 to 10 minutes or till the rice are 95% cooked. This will give you 3 cups after cooking.
  4. Drain the water using a strainer.
  5. Transfer to a plate and allow it to cool for 2 to 3 hours.

For the marination of paneer

  1. Take soy sauce and chilli sauce in a deep bowl.
  2. Add cornflour, salt and pepper to it. Mix well using a spoon. Cornflour helps to thicken the sauce and hence coats well to the paneer cubes while marinating.
  3. Add the paneer cubes and mix lightly. Instead of paneer, you can use tofu.
  4. Cover with a lid and keep aside for 15 minutes.
  5. Heat the oil in a broad non-stick pan, add the marinated paneer, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Do not cook it for a long time or else they will turn chewy. Keep them aside.

How to make paneer fried rice

  1. Heat the oil in a broad non-stick pan, add the garlic.
  2. Now add ginger, green chillies and sauté on a medium flame for 30 seconds.
  3. Add the carrots.
  4. Then add french beans.
  5. Now add capsicum and sauté on a medium flame for 2 to 3 minutes. You can add any vegetables of your choice.
  6. Add the spring onions and sauté on a medium flame for 1 minute.
  7. Add the soy sauce and chilli sauce. You can change the quantity of these two sauces to get the desired taste.
  8. Furthermore, add the rice and salt, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  9. Add the marinated cooked paneer, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  10. Serve hot garnished with spring onions greens and whites.
  11. Enjoy paneer fried rice with Vegetable Hong Kong Style or Kung Pao Vegetables.
