Method

For moong dal pandoli
 

  1. To make moong dal pandoli, clean and soak the green moong dal in enough water for 2 to 3 hours. Wash thoroughly to remove some skin and drain.
  2. Add the curds and 1 tbsp of water and blend in a mixer till smooth.
  3. Transfer the mixture into a bowl, add the ginger-green chilli paste and salt and mix well. Keep aside.
  4. For the tempering, heat the oil in a small non-stick pan, add the mustard seeds, cumin seeds and asafoetida.
  5. When the seeds crackle, add the tempering to the batter and mix well.
  6. Tie a muslin cloth on top of a vessel half-filled with water and heat till the water boils.
  7. Just before steaming, sprinkle the fruit salt on the batter and add the lemon juice over it. When the bubbles form, mix gently.
  8. Pour 1 tablespoon of the batter on the muslin cloth at regular intervals, cover with a dome shaped lid and steam for 8 to 10 minutes.
  9. Repeat with remaining batter to make more pandolis.
  10. Serve the moong dal pandoli immediately with green chutney.


Variation: chola dal pandoli

how to clean and soak green moong dal

 

    1. The green moong dal you buy should be free of dust, stones and other debris. Check the packaging date before buying and choose from a recent lot.
    2. Pick and clean the green moong dal of any dirt or debris. Here we need 1 cup green moong dal (split green gram).  Moong dal or green moong dal  is rich in Folate, Vitamin B9 or Folic Acid which helps your body to produce and maintain new cells, especially  red blood cells and is pregnancy friendly.     3. Pour enough water to submerge the dal.
    4. Wash the green moong dal. You can see the dirt.
    5. Wash in water 2 to 3 times till dal is clean.
    6. Cover and  soak for 2 hours.
    7. Green moong dal after soaking for 2 hours.
    8. Drain the green moong dal using a strainer. Discard the water. Keep the dal aside.

    1. For the batter of  healthy snack, add the soaked and drained green moong dal in a mixer jar. Moong Dal is heart and diabetes friendly.
    2. Add 1/4 cup fresh curds (dahi). Curds help in weight reduction, good for your heart and build immunity.
    3. Add 1 tablespoon of water. 
    4. Blend in a mixer till smooth.
    5. Transfer the mixture into a bowl.
    6. Add 2 tsp ginger-green chilli paste.
    7. Add salt to taste. We added 1/2 tsp salt.
    8. Mix well.
    9. For the tempering, heat 1 tsp oil in a small non-stick pan.
    10. Add 1 tsp mustard seeds ( rai / sarson).
    11. Add 1 tsp cumin seeds (jeera).
    12. Add 1/2 tsp asafoetida (hing).
    13. Let the seeds crackle.
    14. Add the tempering to the batter.
    15. Mix well.

can pandolis be made in idli stand? or in a steel mesh instead of idli stand with muslin cloth on it

Hi, Ruchi You can use a steel mesh to make the pandolis, but you will have to use the muslin cloth, and then put the batter on it.. at regular intervals. and steam.. or else the batter will drain down..
