Methi na dhebra is a non-fried healthy Gujarati snack. Learn how to make healthy methi Gujarati pattice.
What is a dhebra ? A dhebra is a type of flatbread that is popular in Gujarat, India. It is made with a batter of flour, spices, and vegetables, and is often cooked on a tawa or griddle. Dhebras taste best with green chutney.
To make methi na dhebra dough, in a bowl put methi leaves, bajra flour, jowar flour, besan, chilli powder, hing, curd, ginger-green chilli paste, garlic paste, sugar, salt and with 3 tsp of oil. Make a soft dough, using enough water.
Divide the dough into 20 equal portions. Pat a portion of the dough into a 50 mm. (2”) diameter and 1 cm thick circle in between your palms. Place 6 dough rounds on a hot tava (griddle). Cook these on a medium flame using ½ tsp of oil, till they turn golden brown in colour from both the sides. Serve methi na dhebra hot with green chutney and low fat curds.

Ingredients
For Methi na Dhebra
1 cup finely chopped fenugreek leaves (methi)
1 cup bajra (black millet) flour
1/4 cup jowar (white millet) flour
1 tbsp besan (Bengal gram flour)
1 tsp chilli powder
1/4 tsp asafoetida (hing)
2 tbsp curd (dahi)
1 tbsp ginger-green chilli paste
1 1/2 tsp garlic (lehsun) paste
1 tsp sugar
salt to taste
5 tsp oil
Method
For methi na dhebra
- To make methi na dhebra, in a bowl put methi leaves, bajra flour, jowar flour, besan, chilli powder, hing, curd, ginger-green chilli paste, garlic paste, sugar, salt and with 3 tsp of oil.
- Make a soft dough, using enough water.
- Divide the dough into 20 equal portions. Pat a portion of the dough into a 50 mm. (2”) diameter and 1 cm thick circle in between your palms.
- Place 6 dough rounds on a hot tava (griddle).
- Cook these on a medium flame using ½ tsp of oil, till they turn golden brown in colour from both the sides.
- Serve methi na dhebra hot with fresh curds.

Add salt to taste. We added 3/4th tsp salt.

Add 3 tsp of coconut oil or oil. Consider using coconut oil instead of processed seed oils for a healthier diet.

Gradually add enough water to make a soft dough. We added 1/3rd cup water.

Knead into a soft dough.

Pat each dough piece into a 50 mm. (2”) and 1 cm thick circle in between your palms.

Heat a non-stick tava (griddle) and gerase with oil using a brush.

Place 6 dhebras on the hot tava (griddle) at a time.

Cook on medium heat for 30 to 40 seconds.

Grease the top of the dhebra with oil using a brush.

Flip over.

Use a spatula to press down on the dhebras to ensure even cooking.

Keep cooking and flipping on medium heat till golden brown on both sides.

I made a couple of changes to the recipe and it turned out lovely. I have used jaggery in place of sugar. I also added a tablespoon of makkai flour (not corn starch). This is a quick fix breakfast and wonderful especially in cold and rainy weather.

This one is a healthier option but Tarlaji is right that the fried version tastes better. These dhebras are a little dry..

Hi Nikhil, There is no specific English name for it. However you can ask the shop keeper to give soda used for making papads.
