wash and soak toovar dal

 

    1. This is what toovar dal looks like.
    2. Put the toovar dal in a bowl of water. With your fingers rub the dal and you can see the dirt. Change the water a 2 to 3 times till dal is clean.
    3. Toovar dal is now clean.
    4. Cover and soak for 30 minutes.
    5. This is what the dal looks like after soaking.
    6. Drain.
    7. Keep aside.

    1. In a mixer put the soaked and drained toovar dal. 
    2. Add 1 cup chopped fenugreek (methi) leaves.
    3. Add 2 tbsp roughly chopped green chillies.
    4. Add 2 tbsp curds (dahi).
    5. Add 1 cup of water.
    6. Blend to a smooth paste.
    7. Transfer the mixture in a bowl.
    8. Add 2 tbsp of oil.
    9. Add 1/2 tsp asafoetida (hing).
    10. Add 2 tbsp besan (bengal gram flour).
    11. Add 1 tsp sugar.
    12. Add salt to taste. We added 1 tsp salt.
    13. Mix well.
    14. Just before steaming, add 2 tsp fruit salt.
    15. Put 2 tsp water over the fruit salt.
    16. Let the bubbles form.
    17. Mix gently. Don't over mix the batter or your dhokla will not become fluffy.

    1. To make toovar methi na dhokla recipe | tuvar dal dhokla | Gujarati arhar fenugreek leaves dhokla |  grease a 175 mm. (7”) diameter thali.
    2. Pour the batter spread evenly by rotating the thali clockwise.
    3. Steam in a dhokla steamer for 7 to 8 minutes or till the dhoklas are cooked.
    4. For the tempering, heat the remaining 2 tbsp of oil in a small non-stick pan.
    5. Add 1 1/2 tsp mustard seeds ( rai / sarson).
    6. Add 1 tsp sesame seeds (til).
    7. Let the seeds crackle.
    8. Add a pinch of asafoetida (hing) sauté on a medium flame for a few seconds.
    9. Remove from the flame and add 1 tbsp of water, mix well.
    10. Cool slightly and cut into diamond-shaped pieces.
    11. Pour this tempering equally over both the thalis of the dhoklas.
    12. Garnish toovar methi na dhokla | tuvar dal dhokla | Gujarati arhar fenugreek leaves dhokla |  with coriander and coconut.
    13. Serve toovar methi na dhokla | tuvar dal dhokla | healthy Gujarati arhar fenugreek leaves dhokla |  immediately with green chutney.
tips for toovar methi na dhokla

 

    1. Mix gently. Don't over mix the batter or your dhokla will not become fluffy.
    2. Pour the batter spread evenly by rotating the thali clockwise.
    3. Insert a toothpick to check if the dhokla is properly cooked.
    4. This is the dhokla steamer we used. Same is used for making idli. Just the moulds change.

Dhokla tho Gujus ki jaan hai aur yeh Toovar Methi ka Dhokla bhoat hi swadisht hai. I Love All Dhoklas.

Toovar methi dhokla has a really nice taste.. The dal and methi blend gives a super flavour to the dhokla.. Just loved this gujju recipe..
